Bacon Quiche Tarts

I think these are a really great idea (especially for kids on the go). I brought them to a brunch party and most of them were eaten. I do think they were a little dry, but I'm a beginner cook so that might just be my fault. I like to cook on the healthy side so if I made these again, I would omit or use less cream cheese.

Cream Cheese Cookie Cups

My sister made these for a family BBQ and they were sooooo good. I seriously could not stop eating them. Our only complaint was that there was too much butter. I wonder if it could be made without the butter?

Avocado, Tomato and Mango Salsa

When I made this it actually turned out more like a mango guacamole. I omitted the tomatoes, olive oil, and jalapeno pepper for different reasons. Next time I will definitely be adding the pepper. It needs a little heat to balance the sweetness of the mango. I made a double batch and it was all gone by the end of the party!

Spinach and Potato Frittata

For a beginner cook like myself, this frittata is delicious and easy. I added asparagus because I need to get rid of it. Delicious!

Double Tomato Bruschetta

This recipe is amazingly delicious! After using sun dried tomatoes packed in oil, I found no need for additional olive oil. Adding the fresh basil is a must and definitely kicks the flavor up a notch. I recommend using fresh mozzarella and melting a slice on the bread and adding the mixture on top. I brought this as an appetizer to a friend's birthday and there was not a single tomato slice left over.
