Cranberry Orange Cookies
I've made these a few times and they are a hit. I just use crasins -- no extra water, no liquor, no problem. I don't add the nuts (too many people with allergies) and I've done the glaze but I think that makes them too sweet. I might follow suggestions to cut the sugar a tad -- it does end up a little "grainy"

Connie's Zucchini "Crab" Cakes
Today was the second time I've made it, but the first time with the Old Bay (used italian bread crumbs/seasoning first time). Remember the moisture issue from the first time, so I ran the shredded zucchini through my salad spinner and that seemed to help quite a bit. Also, since I had a scant two cups of zucchini, I left the bread crumbs at one cup and I think that helped as well.

Black Bean Soup II
I was looking for easy black bean soup and this wasn't bad, with a few modifications. I used a 4 oz. can of diced green chilies instead of the bell pepper, diced garlic out of the jar, and 2 cups of chicken broth and another cup of water. I didn't do the cumin because not a big fan but the chillies gave it a nice spice. Also, used my stick blender to puree just enough. Not sure if I needed the cup of water, though, probably will skip the next time.
