Chicken Pot Pie IX

Love this recipe with leftover chicken or a rotisserie chicken from the grocery store. To make it easier, I used a bag of mixed veggies and added a can of potatoes. DELICIOUS!!!!

Caramel Apple Dip

Quick, easy, and delicious! Will definitely make this again. I crumbled a Heath Bar on top... it was amazing!!! You can make it ahead of time and refrigerate... I left it out on the counter for about 30 minutes before guests arrived, and it was perfectly soft!

To Die For Blueberry Muffins

Delicious and simple. I doubled the batter recipe and it made 24 regular-sized muffins. You don't have to double the topping recipe... one batch is plenty for 24 muffins. Awesome as is. Used fresh frozen blueberries and they are perfect.

Grilled Brown Sugar Pork Chops

Thought this was a delicious last minute quick fix for pork chops. I did it exactly as the recipe states... some people said it was watery, that is simply because it needs to boil longer... it took about 5 minutes to get a thick marinade. My only criticism is that it needs a bit more flavor to balance the sweetness... so next time I will add more ginger (1-2 tsp.). I think this would be awesome as a stir fry marinade with veggies!!

Bow Ties with Sausage, Tomatoes and Cream

Loved this! Used 4 oz. cream cheese and 1 cup of milk in lieu of the cream (only because I didn't have any!) and it tasted amazingly rich and delicious! The only other changes I made were to use a 14 oz. can of diced tomatoes and 1/4 tsp. of red pepper since we don't like really spicy foods. I sprinkled parm. cheese on top with the parsley. It was a big hit, even for my picky eater!

Huckleberry Buckle II

Would have gotten 5 stars but for the fact that it was a hair too sweet for me. Next time I will try only a 1/2 cup of sugar in the berry mix. Delicious flavor, though, and nice texture. I made it with fresh blueberries in a 9x13 pan... it cooked for about 40 minutes.

Apple Pie Muffins

I didn't have buttermilk, so I used sour cream, and also used 2 large empire apples (about 2.5 cups). They were delicious. Like other reviewers had said, the flavor of the plain muffin isn't all that strong... next time I will add cinnamon or nutmeg to the apples as others mentioned. I made mini muffins and had approx. 4 dozen out of one batch. More like an apple streusel, not pie, but still great. Will definitely make these again!

Chocolate Chip Muffins

Fantastic with a few minor changes! I used 1 cup of milk instead of 3/4, 1/2 cup of oil instead of 1/3, 1 cup of chocolate chips instead of 3/4, and I added 1/2 teaspoon of vanilla extract. I baked them for 15 min. and that was perfect.. they were moist and delicious! A new family favorite!

Easy OREO Truffles

Apple Stuffed Pork Chops

Yummy! I only gave it 4 stars bc you need to make some changes. I used only 1 cup of dry bread crumbs which was PLENTY. Also, it was really dry so I put a splash of white wine in at the end to moisten the stuffing. Like other reviewers said, DON'T bake it for the time it says. I did 20 min. covered and 20 min. uncovered and it was perfect. Very tasty, nice fall recipe!

Chicken Paprikash

Great recipe. I used chicken breasts and cut them in half- worked just as well as chicken pieces. Lots of dishes to clean up at the end, but worth it. I might use a hair less pepper next time, as I don't like my food too spicy... but you can't go wrong if you follow this recipe!

Tuna Macaroni Salad

Very tasty- and easy, too. I used one and a half boxes of macaroni and kept all of the other measurements the same, except for about 1/2 cup of italian dressing and 2 cans of tuna. I marinated the pasta for a few hours and then put it all together the night before I was to serve it. Then right before serving, I added a few tbsp. of mayo to moisten it up. It was a hit!

Best Big, Fat, Chewy Chocolate Chip Cookie

Fabulous!!!! The best cookie I've ever made. I am on a restricted lactose-free diet so I had to use vegan butter and vegan chocolate chips... they were unbelievable, so I can just imagine what they'd taste like with real butter. Definitely recommend- you can't screw these up!!!

Fiesta Chicken Casserole

I made this with some variations. It was a quick, tasty dinner that went over pretty well with the kids. I used 1 can of corn, drained, and used one entire rotisserie chicken instead of the canned. Instead of rolling the crust out, I just overlapped them on the rectangular pan and smushed the sides down to make a thicker crust. Not the best looking, but easier! My only complaint was that it was a little too runny, but it was still tasty.

Baked Zucchini

Something different from the norm. This is pretty good, although next time I will make some changes. I used olive oil instead of butter as per some other reviews, but I found the flavor wasn't all that great, so I added some butter at the end which was very good. I also used freshly shredded parmesan cheese which was very flavorful. I would recommend this if you're running out of things to do with your garden zucchini, but it's not a dish for all the time.

Laura's Quick Slow Cooker Turkey Chili

Yum! Although my husband loves spicy food, my kids and I don't, so I modified this recipe a bit as per some of the other reviews. First, I used 1 can of tomato soup, 1 can of diced tomatoes, and 1 can of diced tomatoes with pepper and onion. Then I used about 1/4 of a can of chopped chiles. I also used 1 can of black beans, 1 can of red kidney beans, and 1 can of white kidney beans. Lastly, I mixed all of the spices listed together (but not allspice bc I didn't have it), and used about 1/3 of it in the chili. I separated some of the chili halfway through cooking and added more of the spice mix to make it spicier for my husband. I served the chili over rice with cheddar cheese, broken up Fritos, and sour cream. It was a big hit! Very tasty and not too spicy for us girls. I love this chili recipe and would definitely recommend it.... it's hard to find a recipe for ground turkey that actually tastes this good!

Parmesan Chicken I

Very good, reliable crock pot dinner. I normally hate chicken in the crock pot, bc it's usually very dry and never has a great flavor. This recipe has a great parmesan flavor. The chicken was really moist and although the rice was a tad too mushy, the flavor made up for it. Based on other reviews, I made some of my own changes that worked out pretty well- I used 4 chicken breasts and only about 4 tbsp. of butter. I also mixed the "sauce" without adding the rice to it, and poured half over the chicken, sprinkling the top with a little grated parm. I mixed the rice with the remaining amount of sauce and set aside. I put the timer on for 2 hours (cooking on low), and then added the sauce/rice mixture & cooked for another 2 hours on low. I also reserved 1/4 cup fresh shredded parm to sprinkle on top for the last 2 hours. I would recommend not adding the rice until the last hour or half hour... I think it would be perfectly cooked that way and still taste good. Overall, though, an excellent, easy dinner. Oh, and I just used whatever long grain rice I had in the cabinet and it worked out fine.

Banana Banana Bread

This is one of the BEST recipes I have ever come across. I used 3 almost black bananas & and 2 over-ripe but still yellow ones, and followed the rest of the recipe exactly. I have a hard time with banana bread bc they usually either burn on the outside or are raw in the middle. This was perfectly cooked inside and out, and practically melted in my mouth it was so moist. Yum!

Supreme Strawberry Topping

Excellent! I used almost a full lb. of strawberries, cutting them all in half, & cooking 2/3 of them with the sugar and vanilla. I added the rest of the strawberries at the end along with 2 tsp. of cornstarch to thicken it up a bit. Then I used a potato masher to mash it to a chunkier consistency. I might use a hair less sugar next time, as it's a little too sweet for me. But it pairs well with Chantal's New York Style Cheesecake. NOTE: I am updating this review to say that I made it with 1/4 cup of sugar and it was perfect! A big hit as usual.
