Slow-Cooker Chicken Tortilla Soup

This is phenomenal!!! I used two 10 oz cans on rotel since I was out of tomatoes. I garnished with a heap of shredded mozzarella and tortilla chips. I highly recommend mozzarella with this soup. It melts wonderfully and tones down the spiciness of the soup the perfect amount. I can not wait to make this again and again!!

Sloppy Joes II

This is a great simple sloppy joe recipe. I didn't add any brown sugar because I didn't think it needed it. It seemed plenty sweet with just the ketchup, mustard and garlic. Will continue to use this recipe!

Baked Zucchini Chips

These are amazing!! You would never believe that they were so healthy!!! I have made these so many times and they always come out great. They take a little work to individually bread each one and flip them half way but probably because I always make a huge batch! Well worth it

Garlic Chicken

This had a great garlic flavor but did not crisp up at all, even after putting it under the broiler during the last few minutes. It was more of a wet, soggy breading. I probably will not try this again.

Eggplant Parmesan II

Chicken Pot Pie II

This was amazing! I didn't use potatoes and I cooked boneless skinless chicken breasts in the oven, and then shredded it. Other than those changes, i followed the recipe exactly. I will definitely make this again.

Bean and Honey Burrito Casserole

Pecan Pie V

I don't eat pecan pie, but my family didn't like this one. They said the sugar was gritty and crystallized instead of being smooth like with corn syrup. Next time I think I will go with the traditional corn syrup recipe.

Carrot Cake III

This is an amazing carrot cake. It is extremely rich so one piece is just enough. I made it in a 13'9 pan, let it cool, then flipped upside down. I cut the cake into two pieces and put the frosting on the inside and outside. Sooooo good!

Grilled Tilapia with Mango Salsa

This was absolutely amazing!!! I made it for my mothers birthday and it was a huge hit. The salsa could also easily be used for tortilla chips. I will make this again and again!!!
