About this Cook
I have been married for 25 years and have two wonderful boys, 16 and 19. I love dogs, I have three and would have more if my hubby wouldn't kill me. =) I work with special needs kids in a middle school and love it! When I am home I love cooking and playing on the computer. One of my favorite things to do is watch my 16 yr old play baseball. I have followed him all over and met many great friends! I started cooking when I was really young with my dad and baking with my grammie. I am now teaching my dad to bake. He hates measuring!
My favorite things to cook
My favorite thing to cook is mexican food. There are so many wonderful different dishes to make. I have perfected my refried beans and spanish rice. People beg me to make my chili verde. I also love to bake. I am always trying something new. I also like trying new vegetarian dishes as my oldest son stopped eating meat 3 years ago.
My favorite family cooking traditions
My favorite family traditions are just all getting together and cooking and spending time together. We have done this forever. So much more fun to cook with family. Last thanksgiving my niece and I decided to buck tradition and throw turkey out the window. We made a mexican fiesta for the whole family and my parents loved it. We even made tamales for the 1st time! How fun!!!
My cooking triumphs
For me, it was amazing that people would actually pay me to cook for their events! My niece and I did some catering over the summer with much success!
My cooking tragedies
Well... I will never forget nor will my husband ever let me forget, when we were first married I was making beef stroganoff and the onions I put in it were rancid. It was the most foul tasting thing I have ever tasted! Still to this day when I make stroganoff my husband laughs and asks if it will be edible.

Cream Cheese Cookie Cups
I decided to make these last minute for a Bible study tonight and I am so glad that I did. Wow... really yummy! They were all gone in minutes. I did make my own cookie dough, peanut butter with mini chocolate chips. I used splenda instead of sugar and made a chocolate cream cheese using about 1/3 of the powdered sugar called for. This recipe is a definate keeper! thanks for the wonderful idea!

Chocolate-Chocolate Chip Bacon Cookies
WOW!!! Awesome cookie! I am always looking for something new and different and these fit the bill! I also used regular bacon... didn't want the extra sweetness of maple. The only change I made was that I used splenda instead of sugar. Will definately make these again. Bringing them to my Bible study tomorrow! Thanks so much for a great recipe!
