Fish Roll Ups

I made this last night for 6 people, and it was a HUGE hit. I did make one change, and it was to add parmesean cheese to the mushroom/spinach mix. I also didn't add a lot of onion b/c the people I was cooking for don't like onions. I was able to get away with one pearl onion, chopped VERY finely. I also took a tsp of butter and put it on top of the fish roll ups while cooking in the oven. The fish came out amazingly, and the juice that's left over in the pan after cooking - drizzled it on the fish. The fish was moist and delicious.

Tangy Grilled Pork Tenderloin

Fantastic... I did this recipe exactly as it stated and it was awesome on the pork tenderloin, and bbq'd it. The BBQ gave it a really nice flavour. I also used it on boneless, skinless chicken thighs and baked them in the oven and got the same result. Just awesome. This is a staple recipe in my kitchen now! Thanks so much for this easy but incredibly tasty recipe!

Feta Tomato-Basil Fish

This was a wonderful fresh topping for my Walleye. I would highly recommend it. I really like the taste of fresh tomatoes so I think I'll try that next time. Canned ones just seem to take away the freshness of this really simple recipe.

Tangy Cucumber and Avocado Salad

Yummalicious!!! I made this without the cilantro because I didn't have it, and used only lemon juice but also added hot sauce and instead of fresh cilantro, I had ground corriander powder - so I added a tiny bit of that. Even with these changes, the salad was delicious and is fresh and crunchy with the cucumbers. The hot sauce gives it a nice added kick!!

Spicy Slow Cooker Black Bean Soup

I thought this was a fantastic soup. I made it as directed except added half a can of corn because my boyfriend just loves corn and threw in some cooked chicken drumsticks - also because he loves meat. The spice amount is perfect, its incredibly tasty. I just love this soup! Perfect for a cold evening. I served it with a dollop of sour cream and a bit of shredded cheese on top. SUPER YUM. Thanks for this recipe! Definately a keeper!!

Penne a la Vodka II

This is a great recipe. I did only use half a pint of heavy cream as I find that a whole pint is too much. This is tasty and delicious. I recommend adding bacon to the cooking garlic, as it adds a really nice flavour. Then add the tomatoes, basil, salt and pepper. I also add chili peppers when it is cooking to add a little heat also. A classic!!!

Cowboy Oatmeal Cookies

I made these as directed.. they were just OK. I don't know what I did that was different than everyone else, but they were not as awesome as I thought they were going to be. I was looking for a soft oatmeal cookie, and these turned out hard.

Jamie's Cranberry Spinach Salad

I JUST made this and OMG, it was fantastic. My changes were as follows: I didn't use almonds or toast any, I used pecan pieces. Cut down the sugar to 1tbsp (there's enuf sugar in the cranberries), and also cut the vegetable oil to 1/8 cup. I also used dried onion (2tsp) instead of fresh. At the end, I added crumbled Goat cheese, as I have to have cheese in EVERYTHING. It turned out amazing. This is definitely a keeper of a recipe, and I promise you won't be able to put the bowl down to write the review. I wasn't even out of the kitchen yet and I finished the salad. THANK YOU!

Kale Chips

These were to die for. I used sesame oil and red wine vinegar instead, and only cooked them for about 5 mins in the oven. The kale was from my backyard and was so delicious. I couldn't stop eating them and finished the entire bowl. I can't wait until the kale grows more so I can do it again. GREAT recipe, thanks for sharing! I had always heard about kale chips but had never tried them, or kale before. Amazing way to use it. Do be careful with the cooking time b/c they can cook soo quickly. 5 mins was enough for me, if I left them in for 35 minutes I would have had nothing left but ashes! :)

Soft Oatmeal Cookies

I made these just before the holidays after my last batch turned into hockey pucks within a day. These were fantastic. I do recommend that you watch the cooking time if you want them to be soft. My oven (gas) cooked them in 6 minutes. I used a tablespoon to measure so they were all the same size. They didn't spread much at all. Overall, great recipe and I will definitely make them again. I added butterscotch chips and pecans to a few to give them a holiday kick!

Easy Italian Herb Focaccia

This was my first time making focaccia. I loved it! This is a great base recipe to build on. See my changes:I added fresh chopped garlic 2 cloves, 1 tbsp dried rosemary and 2 tsp of Italian spice blend to the mix, otherwise it’s bland. I turn the oven on very low for 4 mins, turn it off, then let it rise in the oven with a damp towel on top and just use your fingers to poke it down, and I add more dried rosemary on top after poked. Cooking time for me was only 20 mins. I also use two pans, one 11x8 and the other 8x9 sprayed with pam. I got two batches out of it. Maybe it was a little thinner but I didn't mind. Mine made around 20 pieces (cut a bit smaller) also better for calorie watching.Dough will be very sticky, don't worry, supposed to be like that. DO NOT ADD ALL 1/4c of oil. ONLY add 2 tbsp to the dough, and another tbsp or two on top before baking.I have made this twice in one week cause it's fab with soup on a cold fall day! Thanks!
