Masala Chai Brownies

I used sweetened coconut instead, since that is all I could find at my store. I also only used 1T of cocoa powder for the bottom of the 8x8 pan. For a light dusting, that was even too much and I ended up dumping some of it out. Even with that, these are amazing brownies. Incredibly soft and moist.

Raspberry and Apricot Rugelach

I have made this recipe numerous times, but I now cheat. I just use a pre-made pie crust for the dough. It much easier and less time consuming. All other ingredients I have kept the same. A great recipe!

Bread Machine Challah I

This recipe turned out great. I tossed in an extra egg, although I don't think it even needed it. I will try it with just 2 next time. I did set the machine to Dough Only and baked it at 375 degrees for 30 minutes. I think its the best Challah I've ever made!

Eggplant Parmesan with Fresh Basil and Smoked Mozzarella

This recipe was amazing!! My kids loved it. I had never made eggplant before and probably only tasted it once (yuck). But my daughter asked to try eggplant so I bought one at the store and found this recipe. I had to use twice the egg and all the breadcrumbs in the house. I also could have made it in a 9X13 pan as it almost overfilled my 9X9. I couldn't figure out the layer exactly if sauce was supposed to go in each layer, but I forgoed it in a few layers to save on space. Truly an amazing dish, even if it was a lot of work! Totally worth it!

These have turned out excellent each time I have made them. I have scaled it up to make more than 2 cups. It just requires a little more time in the oven.
