Smothered Tilapia

This was a nice alternative to the regular tilapia with lemon butter sauce i usually make. I marinated the tilapia in lemon, some steak seasoning, minced garlic and oregano. After an hour or so I breaded them, put them in a baking dish, added a slice of Swiss cheese to each, tomato on top and lemon slices along the sides. Cooked it 350* 23 mins. Came out delicious! Will make again.

Apple Crisp III

Wicked good!! i baked mine in 7x11 pan so i used a little more ingredients-5 granny smith apples, 1/2+ c white sugar, 1/2+ c brown sugar, 1/4c water, 1/4+ OJ, tsp vanilla extract in crust, 1/2 c+ butter, 3/4c+ flour and covered apples in cinnamon. I baked it 400* for 38 mins-came out sooo good! loved the flavors. Will definitely be making this again!

Crazy Chicken Marinade Grilled Chicken

Wicked moist and flavorful! I meant to grill it the same day but ended up baking it the next night. It was marinated over night. I breaded it and baked it 35 mins at 350 and it came out delicious! I baked it on a cookie rack over a baking sheet...Next time I'll try grilling it. Followed the recipe ingredients exactly.

Red Garlic Mashed Potatoes

It was my first time making these. There was two of us-I used 6 red potatoes (we like leftovers), cut them in half, boiled them until tender w/a fork. I also put 3 cut-up garlic cloves, salt and pepper in the water. I drained them then used the potato masher to mash them before using the mixer. In the bowl I put in butter, skim milk, 2 tsp garlic salt, 1 tsp garlic powder, pepper, and 1tsp montreal steak seasoning. I mixed together until finished. Next time I'll use only 1 tsp garlic salt as it was a little salty. I never tried using the sugar since reading the reviews. I'll for sure make this again.

Awesome Slow Cooker Pot Roast

wicked tasty and tender-was my first roast! it was only two of us so i used 2 1/2 lb roast and replaced water with 1 cup beef broth-I followed the rest of the recipe. I put red potatoes, carrots, and onions in; I cooked it on low for 8 hours. It was great!! Will be making it again!

Spider Cupcakes

loved these! they turned out wicked cute! i used both red licorice on some and red shoe string licorice for the others. I used choc frosting and choc sprinkles on top. The cinnamon eyes were adorable w/the candy corn fangs. I made one at a time so the frosting wouldn't harden. My high school students still loved these! Easy to make. Will be my new tradition!

Bat Cupcakes

wicked cute!! i prepared them as the cake package said. I let them cool then decorated one at a time; much easier so the frosting wouldn't harden. I used chocolate frosting w/chocolate sprinkles, cut the fudge stripe cookies in half, put the hershey kiss, and dotted the bat eye. My students loved them-and they were high schoolers! will be making these every year.

Spiced Pumpkin Seeds

I baked the seeds for my first time tonight. I doubled the recipe as some reviews recommended. I am not too nuts about the taste. It was wicked salty so next time I'll go light on the salt. I baked them at 300 for about 70 mins-a little too long.

Caramel Brownies

These were wicked gooey and yummy!! I heard the horrors of caramel cleanup so I used the sundae carmel sauce instead of wrapped caramels; in place of nuts I used heath bar pieces from the baking aisle; and Devils Food Cake in place of the recommended one (store didn't carry it). Only thing I would change is use a smaller pan-not the 9x13 because they were very thin and i like my brownies thicker. My students loved them!!

Quick Chicken Cordon Bleu

I'm a very new cook and I'd give this a 10! I followed the directions to a T except instead of microwaving it I put it in the oven at 350 for 35 minutes (microwave was a little too sketchy for me to cook chicken). The sauce is wicked good and my husband is already requesting it again!

Lower Fat Banana Bread II

this was my first time making banana bread. I used this recipe and took from other reviews....i used yogurt instead of the applesauce, splenda instead of the sugar (1/2 of the amount), and mini semi-sweet choc chips instead of walnuts--it turned out great! it was moist and delicious!! i will be making this recipe again!
