Spinach Quiche

Reviewed: Nov. 22, 2002
This is a wonderful quiche! I was looking for a recipe with spinach & mushrooms. I didn't have any feta, so I used some blue cheese instead. I also used some dried minced onion and sauteed it with the garlic and mushrooms. I used butter flavored cooking spray instead of butter. I also substituted whipping cream for 1/2 of the milk. It all fit perfectly into a deep dish crust which I had prebaked for a few minutes. I will most definitely make this again!!

Double Layer Pumpkin Cheesecake

Reviewed: Oct. 19, 2002
I made this for a death in the family because I wanted pumpkin pie flavor, but I didn't want to use whipped cream. This was the perfect solution. All of the taste with no real need for the whipped cream. Everyone loved it. Thanks!

Old Fashioned Paradise Pumpkin Pie

Reviewed: Oct. 19, 2002
This is a fantastic recipe! I poured my pumpkin in a little too fast and I ended up with a wonderful marbled effect. The topping really sets the whole thing off. Will definitely be taking to Thanksgiving dinner at the in-laws. Thanks!

Pumpkin Butter

Reviewed: Oct. 19, 2002
This is a wonderful recipe! I doubled the batch and used my crockpot instead of the stove. I also used fresh pumpkin and pureed it in my food processor. The result was some beautiful and tasty gifts for my family and friends. Will definitely be making more soon!

Broccoli Chicken Casserole I

Reviewed: Oct. 19, 2002
I used two cans of soup (cream of mushroom w/garlic, broccoli cheese) and 1/2 cup of milk instead of adding mayo. I also prepared the stuffing first and used a few bread crumbs on the top for a crunch. Everyone liked it that way and asked for the recipe. I also used canned chicken to save time. Thanks!

Pickled Green Beans

Reviewed: Sep. 9, 2002
These beans are wonderful! My great uncle used to can dilly beans for me when I was younger and since he passed away I've been craving them. No one else in my family cans them. I found this recipe and made my own. I've been putting them into quarts because the pints just don't last long enough. Thanks so much!

Green Bean and Feta Salad

Reviewed: Sep. 9, 2002
I fixed this salad for my family reunion, and was too embarrassed to take it. It was terrible. The dressing and the feta cheese were lovely together and I will definitely use them again over some lettuce next time. No more bean salads for me unless it's three bean.

Dried Beef Cheese Ball

Reviewed: Sep. 9, 2002
This is a wonderful cheeseball! Exactly what I was looking for, and it was a huge hit at my best friend's bridal shower. I added about a teaspoon of horseradish for a little extra bite.

Squash Casserole I

This recipe has a wonderful flavor, but was a little watery. I think I'll cut down on the liquid next time.

Best Zucchini Appetizer

Reviewed: Sep. 9, 2002
I felt that this recipe was too much like quiche for an appetizer. It would be wonderful for brunch, but didn't go over very well at dinner. It had a great flavor, just not what I was expecting.

Fudgy Cream Cheese Tunnel Cake

Reviewed: Jan. 24, 2002
My family loved this cake! I made it to serve to our new pastor and his family, and I want to thank the author for helping me make a great impression. I only baked the cake for 45 minutes, and that kept it from drying out on the bottom. I omitted the nuts and it was just as delicious!
