Pumpkin Apple Streusel Muffins

I have made this both with and without the streudel topping, and it was delicious both times. Extremely moist. The first time I had to use 1/2 oil and 1/2 butter because I ran out of oil, but I imagine that it makes little difference using one over the other. Love it - now my go to pumpkin baking recipe!

Creamy Chocolate Frosting

I used Ghiradelli chocolate powder. Added 1/2 tsp salt. Very chocolatey and intensely flavored. But it wasn't a lot for two 9" rounds.

Ratatouille

I skipped the eggplant because I didn't have one. As it was, it barely fit in the casserole dish, but it turned out beautifully. A big hit with the family. Delicious. I thinking using really good cheese made a difference, too.

Spiced Bacon Twists

This was a huge hit. A teen at a recent party said, "Whoever made that bacon is a genius." After I claimed credit, he gave me not one but two hugs! The only extra tips I can offer is to twist it more than you think you need to because it can become untwisted a bit as it cooks; maybe use toothpicks to keep them in place. You can retwist when you remove from the oven, but they are HOT!

Beef and Noodle Bake

I used ground turkey, added onions and garlic while browning the turkey. Used whatever real cheese we have on hand, usually a blend of cheddar, parm, mozzarella... Pretty good. Easy, as others have said.

Zebra Cake III

This was my mom's go-to special occasion dessert. We loved it! It's now my kids' favorite. At Christmas, I used peppermint extract in the whipped cream and garnished with crushed peppermint candies. I recently found the choc wafers near ice cream cones and toppings at the grocery store...

Blueberry Apple Crisp

Delicious! I substituted strawberries for the apples and didn't use the white sugar, since the fruit was so sweet. Only used a total of 4 1/2 - 5 C of fruit, and it was plenty. Could have used a bit more of the flour mixture, but it was fine as it was. Made 9 small servings.
