Easy Chicken Casserole

I needed something fast and easy tonight for dinner and this fit the bill! The only thing I did was add some broccoli to it for color so I didn't have to have any sides. We ate every last bite and I'm pretty sure this will be asked for again!

Tar Heel Pie

This is a 5-star recipe just as it stands. It could be a 10-star recipe with just one change, and that change is personal preference: Cut back on the coconut! I made this for our 4th of July picnic and every member of my family agreed this would be super-fabulous if made with less coconut. Next time I will cut the amount to 1/4 cup. My daughter's favorite "pie" I make is the Tollhouse Pie which is very similar to a Kentucky Derby Pie and she said I could quit making that and make this Tar Heel Pie instead. We all loved it - with a scoop of vanilla ice cream on the side!

Annie's Fruit Salsa and Cinnamon Chips

Made this for on the appetizer table on Easter. I never expected it to go over as big as it did! Turned out to be a huge hit! I only cut up one apple, as I could tell it was going to be making a lot! I also did not make the tortillas. I just bought Cinnamon grahams instead. Next time I'll try the tortillas.

Raleys Irish Corned Beef Stew

I made this for our St. Patrick's Day Sunday dinner. We had our Mexican friends over and they loved it! Even my daughter, who didn't think she'd like it ate a bowl. I didn't really make any changes to this at all, just made it as is. I made a loaf of soda bread and had a bowl of fresh strawberries and grapes and dinner was a huge hit with young and old alike! The 7-year old Mexican boy proclaimed we were all leprechauns now!

Roasted Asparagus with Parmesan

Yummy! If there is one thing I dislike it is mushy asparagus. This came out with plenty of flavor and plenty of "crunch". We loved it and I will make this again.

Layered Spinach Salad

Jan's Thin and Crispy Pizzelles

Thank you What's for dinner, mom?! These were fabulous! They were so easy to make and took about 25 seconds in my new pizzelle maker. I did not use anise because we are not fans of anise, but I used almond extract instead. I also rolled some of them to make cannolis. Delicious! Served them for dessert after a dinner out at an Italian restaurant. Our friends' kids all wanted more. They asked to also eat some pizzelles with ice cream. This is definitely a great recipe and I think I'll be making more of these this week!

Oatmeal Banana Nut Bread

My bread came out very moist and full of banana flavor! I didn't have walnuts, so I used pecans instead. I prefer them over walnuts. I did use a little extra banana,but only because I had it. I'll make this again.

Monkey Bars

I'm only giving this recipe 5 stars for one reason - It should make more!! Seriously - if I could rate it a "10" I would! These are so moist and the banana flavor is great! My bananas were very ripe and I think that helps to impart more great banana flavor. I didn't use raisins as I'm not a huge fan of them, but instead used chocolate chips. I didn't put the choc.chips in the microwave with the rum though, as I did not want them to melt. Instead I heated the rum for 10 seconds, let cool a bit, then added 1/2 c. chocolate chips. Delicious!!

Amazingly Easy Irish Soda Bread

This was delicious! The entire loaf was eaten with dinner tonight. I basted the loaf with the buttermilk/butter mixture about every 10 minutes or so. I followed the ideas from several other reviewers and used brown sugar in place of the white sugar. It went especially well with the homemade raspberry preserves I had.

Bacon Wrapped Duck Breasts

A great way to prepare duck! Mine did not take an hour to cook, more like 40-45 minutes. My husband and son are both avid waterfowl hunters and I'm always looking for new ways to prepare what they bring home. This was good!

Zesty Apple Salad

We had our first luncheon of the year at work today. I work at a school and we take turns (by departments) each month and sponsor a luncheon. I made this and doubled the recipe. Huge hit! Everyone liked it and there was enough left over for me to stop at my parents' house after work and share with them. I used lemon greek yogurt and everyone said they loved the dressing on this. Very nice salad with a Fall twist to it.

Gail's Seven Layer Salad

Wonderful! Made it for a luncheon at work and everyone scarfed it down quickly! I put together the lettuce, cabbage & carrot part in a large bowl last night. Then I diced my tomato, chopped the green onion, and crushed the chips and put them in individual containers. I put the salad altogether about half hour before serving. I used light Ranch dressing. Everyone loved the avocado! I will be making this again. Thank you!

Wild Duck Gumbo

This is one of our favorite ways to prepare the duck my husband and son shoot. They are both avid waterfowl hunters and so I always have plenty of duck in my freezer for this. I do cut back on the celery, personal preference, and sometimes I add some okra to it. One of these times I'm going to try chorizo sausage in place of the smoked sausage. I was very happy to come across this recipe! Thank you!

Asparagus with Sliced Almonds and Parmesan Cheese

We loved this! It was quick and easy to prepare and had wonderful flavor. Went very nicely with grilled chicken and scalloped potatoes. There is nothing I would do differently, it's great just as is.

Colcannon Bake

This was very good! I made a corned beef in the crock pot with carrots and this went with it great! I followed the recipe to a T, except I had some bacon crumbles so I threw them in for added flavor. At first I was a little worried because when I mashed the potatoes they seemed too runny, but as they baked they thickened up nicely. I will be making this again.

The salad was just salad, but the dressing is awesome! Everyone loved it. It was a little thick, so next time I'll thin it out a little, but I know this dressing will be on my table a lot!

Seafood Piccata

We used angel hair pasta for this, and it was delicious! There were only two of us, so I cut the recipe in half and we had leftovers the second night. Made a delicious, quick seafood dinner! I'm thinking maybe next time I'll sprinkle some fresh parmesan cheese over it.

Pork Rib Rub

Yummy! We made ribs today and this rub was great. After I put it on the baby back ribs I stuck the ribs on a rack in the pan, put them in the oven on about 225 degrees and cooked them low and slow. Once done,I generously brushed Sweet Baby Ray's BBQ sauce on them and stuck them under the broiler for a few minutes. Great flavor!
