Classic Spanish Paella

Very good! I had recently bought saffron for the first time and was excited to use it. I posted on the Buzz that I was going to make a paella recipe, and Don posted this one to try. It is exactly what I thought paella should be! There is a lot of prep to it, but I believe it was well worth it. Hubby helped me with a lot of the chopping, etc. so it went quickly. I would say it makes 4 very generous servings. I'm going to take some for my lunch tomorrow and we'll finish it up for dinner tomorrow night. Thank you, Don!! This one stays in my recipe box!

Easy Chicken Enchiladas

These were quite good. I will probably make again because they were not only good but very easy to make. I think I will leave the beans out next time, though.

Mexican Rice II

I made this exactly as is. It was good and made a nice side to the enchiladas I made. But, it was just a little too much tomatoey flavor. Like other reviewers my rice did not puff, but I did cook until a golden color. If I use this recipe again I will experiment a little, use less tomato, and see what I can come up with.

Mary's Sugar Cookies

As a sugar cookie I rate this a 5. For how much fun we had making and decorating, I'd give it a 10! The recipe was easy, rolled out nicely and baked up nice and soft. To give them even a bigger hint of almond I added almond extract to the icing I put on them. My grown kids and I made these with 3 small children who had never decorated Christmas cookies before. This recipe helped to make some very good memories for some very special children!

Roasted Vegetable Medley

Delicious! But I'm only giving the recipe a 4 as I shortened the cooking time by about 15-20 minutes. We prefer our veggies a little less mushy than this would have been had I cooked as long as stated. Flavors all went very well together. For color I also added yellow squash to the mix and cut some mushrooms in half and threw in as well. Loved what the fresh basil did for this! We'll have these again for sure.

Easy Mexican Casserole

We enjoyed this and will be making it again. I think next time I will crush tortilla chips and put thm on top once the casserole is out of the oven to give it some "crunch".

Cranberry Almond Biscotti

Delicious and pretty on the cookie tray. I loved the flavor of the almondsd and dried cranberries. I used vanilla extract when mixing the dough.

Perfect! I found that halfway thru the dipping process I had to stick my peanut-butter balls back in the fridge to firm up as my toothpick was sliding out of it when I dipped in the chocolate. Made a great addition to my holiday cookie tray!

Waikiki-Style Meatballs

This sauce is delicious! I made it exactly as is. However, I did not put it on meatballs - I baked boneless/skinless chicken breasts with this sauce poured on top of them. After reading a blog of another fellow "AR Peep" who had made this and commented it would go well on just about anything, I knew I had to try it. I believe next time I make this I will have pheasant. Hubby said pork would be great as well. Thanks for a great sauce!

Creamy Split Pea Soup

I made this after I got to thinking how I hated split pea soup as a kid. I like a lot of things now I never did back then so thought I'd give it a try. Wow! I really liked this, and so did hubby. It was easy to make, I didn't have any celery so I just omitted it and we didn't miss it in there one bit. We'll be having this again!

New England Clam Chowder II

For clam chowder this gets 3 stars. I followed this recipe exactly as is - it's a very good potato soup, but there isn't much clam chowder to it at all. My son and husband both liked it, but both were disappointed when they came to the table and there was no clam chowder as promised. I'm going to keep looking for a decent clam chowder recipe.

Balsamic Green Beans

Saveur, thanks so much for sharing this with me for my "mini-Thanksgiving" left-over meal! I thought I had the pepper bacon, but when I pulled it out turns out it was maple bacon. But I used it anyways and those beans were really, really good! I loved the balsamic vinegar on them - we grill asparagus and brussels sprouts using it, but never had with beans. I'll make my green beans like this any time I have bacon; or I was even thinking ham would be fine in a pinch. Thank you!

Kentucky Bourbon Pecan Sweet Potatoes

These haven't even made it to the table yet, in fact they aren't even fully cooked. But, I stole a taste of that sauce and MAN OH MAN! So good and rich. I used real butter for this, not margarine and used the brown sugar for a richer flavor. I followed the footnote and added a bit more bourbon and a bit more vanilla. It is really good. I can't wait for dinner!

Ham Broccoli Braid

I cut this recipe in half and made a small braid since it was just the 2 of us. Other than that I followed it exactly and it is quite good! While it was in the oven baking I remembered I had a nice bottle of Rose' wine from our Virginia wine trip this summer. It went fantastic with this! I might add mushrooms next time.

Grilled Yellow Squash

Very good! I have a nice grilling basket, so I sliced my squash, but other than that small change I made it like it says. Very tasty. I love grilled veggies but had never grilled yellow squash. I will be grilling it now!

Sausage Barley Soup

Lentil and Sausage Soup

This is an awesome soup! I tried it out on my husband first and he gave it his stamp of approval so I made it for a luncheon at work. Big Hit! I used some chorizo sausage just to spice it up a bit.

Pumpkin Pie Oatmeal

I have to say these were a HUGE hit! I just recently bought steel cut oats so I converted these to a crockpot recipe using them. I used 1 cup steel cut oats, 3-1/2 cups water and followed the rest of the recipe as is. Delicious! I wouldn't normally write a review when I didn't follow exact directions, but really other than using a different type of oats it is the same recipe. BigShotsMom, we really enjoyed these! Thank you!

Pumpkin Snickerdoodles

These are really good, and easy to make! I followed the recipe exact, except for the very last sentence "Store in airtight container". Umm... I didn't have any left to store! :-) Next time I might add some cinnamon to the sugar that I rolled them in.
