MY Peach Bread Pudding

After making this recipe a few times, hubby and I have agreed that cutting the amount of cinnamon is a real good idea. We use about 1/2 tsp. now and that seems much better. ENJOY!

Affy Tapple Salad

Yummy! Very easy to make and it comes together nicely! I did find that 2 cups of peanuts seemed like an awful lot as I was putting them into the mixture, so I ended up only using 1-1/2 cups and I think that was a perfect amount. I'm not sure about the serving size of 12; I think it would depend on what is considered a serving... but it fit perfectly into a 2 quart dish. This is a dish you can make relatively inexpensively yet it is a nice presentation. Looks as pretty as it tastes!

Smooth Buttercream Frosting

This is a great recipe! I like sweet buttercream frosting, but most people do not. I believe this fits the bill! I made a birthday cake that was shared with many people, some who do not care for sweets and they all declared this delicious! It was just the perfect spreading consistency, too.

Easy Lemon Cookies

I made these to take to a "room-painting party" at my daughter and son-in-law's new home. I provided lunch and cleaned up while everyone else picked a room and got busy painting. These cookies were a hit, but I think they weren't really lemon-y enough - next time I'll add some lemon zest to them.

Chorizo Chicken Roll

I was looking for something different tonight that used minimal ingredients as we just returned from vacation and I had very little to choose from. This fit the bill perfectly! It was quite easy to make and very tasty. I followed recipe exactly, except I did sprinkle some garlic powder on the slices and then some very finely grated swiss cheese. This made a pretty presentation and hubby said we could have these again anytime!

Easy Chicken Casserole

I needed something fast and easy tonight for dinner and this fit the bill! The only thing I did was add some broccoli to it for color so I didn't have to have any sides. We ate every last bite and I'm pretty sure this will be asked for again!

Roasted Asparagus with Parmesan

Yummy! If there is one thing I dislike it is mushy asparagus. This came out with plenty of flavor and plenty of "crunch". We loved it and I will make this again.

Annie's Fruit Salsa and Cinnamon Chips

Made this for on the appetizer table on Easter. I never expected it to go over as big as it did! Turned out to be a huge hit! I only cut up one apple, as I could tell it was going to be making a lot! I also did not make the tortillas. I just bought Cinnamon grahams instead. Next time I'll try the tortillas.

Tortellini Bacon Broccoli Salad

This was a huge hit at my Easter table! Everyone loved it. I knew I would be really busy on Easter Sunday, so I cooked my bacon the day before to save some time. I also cut it up before I cooked it. This will be made again!

Penne with Chicken and Asparagus

We really, really loved this! It was light and flavorful. I read the review from the poster of this recipe (Laurel B) and added mushrooms to the mix. I also had read that some felt it was bland. I added some lemon/pepper seasoning and plenty of extra garlic. Hubby took one look at it and seemed disappointed - he was expecting a creamy pasta meal. But, after only one bite he changed his tune and asked if we could have the leftovers for dinner the next night!

Snickerdoodle Cake I

this is an excellent tasting coffee cake! I followed the suggestions of a few other reviewers and doubled the cinnamon/sugar mixture adding half to the middle of the cake batter. I also added a tsp. vanilla and a tsp. of cinnamon to the batter for more flavor. I also poured 6 Tbl. of melted butter over it immediately after removing from the oven. I think next time I will also add a tsp. of cream of tartar since snickerdoodle cookies contain that ingredient. This is a perfect cake to share with a friend while catching up on each other's lives over tea. Thank you!

Pizza Crust for the Bread Machine II

Not bad. I liked that it was thinner than my normal go-to crust recipe. Certainly was simple to make - just throw all the ingredients into the bread machine and wait until the bell sounds! I might experiment by adding some seasonings of some type to it and I think I needed to bake the crust by itself for a little bit as it didn't seem "crisp" enough for me under all my toppings and sauce.

Salisbury Steak with Mushrooms

We really enjoyed this meal - the gravy was great over mashed potatoes. A real comfort meal for sure! Next time I'll use more mushrooms, though, because we really like mushrooms. Hubby said this was way better than the frozen pre-made Salisbury steaks we've had in the past. I agree and since this was so easy to make and I usually have all the ingredients on hand I will make this again.

Cream of Anything Soup Mix

I just made this to use in a recipe that calls for a can of condensed cream of chicken and condensed cream of mushroom soup. I made it to the point of adding the milk, which I did not since the recipe does not call for the soup to be "soupy" - it just calls for the cans of condensed soup to be dumped in and mixed with sour cream, noodles, chicken. I will be using this recipe from here on out to make my condensed soups for recipes! It was quick, easy, and tastes great, too!

Pot Roast with Balsamic Onions

I made this for Recipe Group. I have to say it was OK, but not good. I will probably not make again, and just stick with my other recipes for beef roasts. I thought the vinegar was way overboard, and the rest was quite bland. When it was finished I removed from the slow cooker and thickened the juice into a "gravy" then shredded the meat and returned to the slow cooker. I made mashed potatoes and we ate it as an open-faced sandwich with corn on the side. Hubby agreed he'd rather not have this again.

Brandied Shrimp with Pasta

This was excellent! I was looking for a recipe using shrimp and basil as I had some of both that needed to be used up. I had never "caught my food on fire" while preparing before, so it was fun when I lit the brandy on fire. :) I was a little skeptical when I was ready to serve it as the sauce seemed so thin. No worries - it was perfect and stuck to my pasta just fine. My husband really loved it - he made many comments, all positive. I used garlic parsley noodles and I believe that added some additional great flavor to this meal. I will be making this again and probably for company!

Thank you, Don, for suggesting this as a way for me to use left-over prime rib and au-jus that I had! I added some fresh parsley as I had it in the fridge and it needed used up. It was good and filling.

Spicy Baked Sweet Potato Fries

Wow! Spicy with just a hint of sweet! I loved them, but hubby thought they were just a tad too hot for his likes. Next time, if I'm feeling nice, I'll cut back on the cayenne for him; but I liked them just as is! Went great with our grilled brats.
