When Mom's Away.... Dad Comes to Dinner

My mom took off early in the week with my little sister and niece and headed to Illinois for a dog show.  Dad stayed home to look after their dog, a lab. The dog show is the Nationals for Spinone Italianos; the breed of dog my sisters have. Before she left, though, she did fill the freezer with easy to make frozen dinners and told him to run the vacuum cleaner.   

I knew my Dad would get tired of the frozen dinners, so I gave him a call and told him to come over for a fish fry on Thursday evening. Jon went fishing a couple weeks ago and caught a nice bunch of gigantic crappies. We had one nice meal and the rest we put in the freezer.  I use 'Shore Lunch' to bread my fish before frying. It fries up with a light breading that has good flavor; you can still taste the fish when it's done.  To go with that we had french fries and cole slaw, along with store-bought bakery dinner rolls (it was a week night after all).   While walking through the store to get the rolls, I spied a display of strawberries and the little sponge-cake cups.  Hmmmm......   Strawberry shortcake with vanilla ice cream and whipped cream on top would make a great dessert!  Those were some very tasty strawberries.  I wish I would have bought more.

Dad filled us in on what he's been doing to keep himself busy while Mom is away.  He's taken the dog for a few walks to the woods, mowed the lawn, went to his heart rehab classes, and watched some sports on TV.  I noticed he didn't mention vacuuming.  So, as he left for home I reminded him to not forget to do it before she gets home!

Mother Ann, a meal worth eating. Serve me a fish plate with coleslaw and a side of fries. After having only a grilled cheese sandwich for dinner I am now craving strawberries. Strawberries are my favorite dessert or fruit when they are sweet. I enjoy reading your blog, I learn something every time. I never heard of Shore Lunch for breading fish. I will have to check into this. I love he reminder to Dad to vacuum.

MA... I love this blog...! Next fishing trip.. tell Jon to send a couple crappies my way! I love the white tender taste of fresh water fish! Did Dad indeed vacuum?

Lela - I don't know if you have Gander Mountain stores around you, but that is where we get it from. I'm thinking its possible that Cabela's or Bass Pro Shops may also carry it. Mom will be home today some time, maybe I'd better remind him again?? :)

KingSparta - It must be carp. Crappie are a lot like a bluegill, I believe they're both in the sunfish family.

Terry - Deal! Nothing beats a meal of crappie or perch! Unless it's walleye. Or, if you can get to the ocean I love flounder! If he hasn't vacuumed yet, he will be sometime this morning. We all know we have to do what Mom says! ;)

Happy to report Dad did not forget to vacuum! He knows he would have gotten in big trouble had he not!! LOL Mike, my mom would never joke about assigning chores! :) He even did the dishes, but put some things away in the wrong place!

About Me
I've been married for 33 years, and live in Ohio. We have a daughter who is married and lives nearby. Our son graduated from college and moved to South Dakota. He has his own place but still goes to visit my sister and brother-in-law and have dinner with them occasionally. We have two black labs that get to go duck hunting with dad and two cats. We own a Mexican restaurant and are learning alot about the food industry. I love to eat, go camping, read, spend time with family and friends, watch movies, and drink wine; not necessarily in that order.

My husband and I enjoy cooking together with wine. We pop open a bottle of wine and get cooking. :-)

Whenever I can put together a meal that gets many compliments and leaves the diners satisfied is a triumph in my book! I love to cook meals for family and friends.
My cooking tragedies
When I was first married we had my grandparent's-in-law over for a pot roast dinner. The meat came out great, but the potatoes and carrots were still half raw. My husband's grandfather went to cut his fork into a carrot and it flew off his plate. He looked at me, winked, and said he loved his carrots that way!
