I sit here sipping coffee in my new living room!  It's not totally finished, but it is totally new and that makes the coffee taste better!  I'll post pictures once it is completely done, but that will be a while.  My husband still has baseboard to do and he can't get to it just yet.  I can wait.  I've waited a long time for this and enough is done that I'm content to lay off the nagging for a while.  :-)  

Two weeks ago my son came home for Spring Break and most of his break was spent helping with the project.  By the time he left to go back to school last Sunday all that remained was carpet and baseboard.  The carpet guy came on Monday and we spent the evening putting our furniture back in the room.  Now, I have NEVER had new carpet in my living room so imagine how I want to keep it clean and new looking for as long as possible.  Also imagine what it's like living with two huge labs and a muddy yard!  I have cleaned and wiped their feet more than ever and they have spent more time in the basement than they ever have before!  We also have two cats, but they never go outside so I wasn't worrried about them.  I should have been.  Thursday a friend came over to admire my husband's handiwork.  As we sat talking, I look to my right and what do I see?  Apparently one of my cat's stomach didn't agree with their food that day.  Surprisingly it cleaned right up and you'd never know it was there.  But it still ruined that "new" feeling to me.  Oh well. I have two grown kids, I'm used to things like that. 

I'll write a re-cap of the week so I can get the food part into the blog.  :-)    On Tuesday my daughter and son-in-law wanted to come over to see the new room.  So of course I invited them for dinner.  I needed something quick and easy since I would be at work all day.  I found this slow-cooker chicken recipe.  I added a few potatoes to the bottom of the crock pot and steamed some broccoli and we had a very tasty dinner.  I also made a box of brownies using blackberry wine in place of the water.  The wine came from our Virginia wine trip last summer.  A lady at a berry farm & winery suggested I try it with their wine.  I'm really glad I had bought a bottle and remembered that was the reason why!  Very good indeed. 

Wednesday my parents came over for some homemade pizza.  I used my old stand-by crust recipe that came from my daughter's 2nd grade teacher.  It is easy, quick and very good. We also polished off the pan of brownies.  After my parents left I got busy making my contribution for the St. Patrick's Day Lunch at work the next day.  I made Irish Cream Chocolate Cheesecake.  I have made a lot of cheesecake in my time, but never this recipe.  This is now one of my favorites!  I had one problem with it - it cracked.  Not just a tiny little crack, but great big, huge, Grand Canyon craters!  I'm not sure what I did wrong as I have never had that happen before.  But, I just sliced it before setting it out and nobody could really tell.  I got nothing but constant compliments the rest of the day. 

Thursday my husband was out of town so I just ate left-overs from the fridge.  Friday we went to our Mexican friend's restaurant.  I was all set for a frozen margarita, but his machine was broken!  So, I settled for a Mexican beer to go with my honey chipotle chicken.  I also had some of the hottest pico de gallo I have ever had. 

Spring has arrived here, at least for the moment.  I have spent a lot of time outside and taking the dogs for walks.  Good for them and good for me.  It's so nice to hear the birds singing in the mornings.  Happy Spring everyone!

I told you, painful process, but so worth it! Keep an eye on the of mine will lose her mind now and then and use the carpet to sharpen her nails... Enjoy your new room, can't wait for the pix.

Mike - Thank you for sharing that link! I have heard of water baths, but never paid attention to the whys, hows. I never had it happen to me before. Now I want to make another cheesecake and try this to see what happens! My husband likes that idea - he didn't get any of the last one since it went to work.

You brave woman! Carpet and pets! I refused carpet when we moved in and asked for wood floors. DH insisted we carpet the bedrooms. He got one done-the kid's. When the kid changed rooms I managed to get rid of the carpet. I think I'd like carpet if I had a carpet cleaning maid following after those that live here :)

Congrats Mother Ann! I dream of the day when I'll have coffee in a new living room with hard wood floors! With two cats indoors and two indoor/outdoor dogs, our carpet has taken a beating over the last 19 years. Spring has sprung in Mid Missouri as well, and a beautiful spring it is. Enjoy!

Mangel - We considered hardwood floors. We already have 2 rooms with new hardwood floors, so I wanted carpet in the living room. I hope you get yours soon!

Lee - our friend's restaurant is Acapulco Mexican Grill, in Rootstown, Ohio. It is awesome - reasonable prices and excellent food! The owner of the building is a good friend of my husband's. He is a building contractor and my husband does a lot of work for him. He runs an ice cream stand out of one part of the building. He makes the ice cream and it is fabulous. Called Billock's Ice Cream. They are opening this Friday and I cannot wait. Their ice cream is better than Handel's or Cold Stone Creamery. Do you live anywhere near here?

enjoy your new room. When I got new counters, flooring, etc I try to make a tiny scratch, dent, or mark. This way I am not upset when someone else ruins the newness of it. Your dog took care of the new carpet smell, should be good to go now.

Thank you! I live in Vermilion.My whole family loves spicy food.The youngest two treat hot sauces like ketchup, (catsup)they put it on everything! Did you say ice cream on a cold day? LOL! I can eat it all year long.Can't wait to try the place,thanks again.

Lee, you are very welcome! Acapulco is very good, but not real spicy - they have a few things on the menu that are, but if you ask, they have some good, spicy sauce. Sometimes the pico de gallo is HOT! Let me know if/when you try it out.

Hey Mother Ann, I am so glad to here you are enjoying your new living room! I can't wait to see the pictures of your hubby and sons work, no doubt wonderful! Sounds like you had a great week, and about your cheesecake cracking, I hate when mine cracks but when it does my mother says thats when it looks the best because it doesn't look store bought. I myself rather it not crack. Do you bake it in a water bath? I think mine cracks when there's not enough water, but hey what do I know. Have a great week.

dragonfly - hubby is putting the baseboard up this weekend, so a new blog with photos of the finished product will be done early next week. I have never used a waterbath, but will next time to see if it helps. I like your mom. :-)

Congrats on the new room! You may have convinced me to try the cheesecake. My best advice (though I've never made a recipe that included sour cream) is to beat the cream cheese by itself first and combine the eggs last like most other recipes. If you follow the instructions I believe way too much air gets added. Of course, I could be incorrect. :)

About Me
I've been married for 33 years, and live in Ohio. We have a daughter who is married and lives nearby. Our son graduated from college and moved to South Dakota. He has his own place but still goes to visit my sister and brother-in-law and have dinner with them occasionally. We have two black labs that get to go duck hunting with dad and two cats. We own a Mexican restaurant and are learning alot about the food industry. I love to eat, go camping, read, spend time with family and friends, watch movies, and drink wine; not necessarily in that order.

I love to bake - anything chocolate is fine with me. Seafood, chicken dishes and slow-cooker fare.

My husband and I enjoy cooking together with wine. We pop open a bottle of wine and get cooking. :-)

Whenever I can put together a meal that gets many compliments and leaves the diners satisfied is a triumph in my book! I love to cook meals for family and friends.
My cooking tragedies
When I was first married we had my grandparent's-in-law over for a pot roast dinner. The meat came out great, but the potatoes and carrots were still half raw. My husband's grandfather went to cut his fork into a carrot and it flew off his plate. He looked at me, winked, and said he loved his carrots that way!
