Herb, Garlic and Bacon Pork Loin

Pig and more pig! Delicious! I used a small tenderloin and marinated it in sweet white wine, basil, rosemary (I always crush my dried rosemary), oregano, white pepper, and sage. Then, I roasted it with some onions coated in olive oil. I turned the broiler on low at the end for about 7 minutes to crisp up the bacon! I served it with garlic mashed potatoes and made gravy from the pork drippings and added some garlic, salt, and fresh ground pepper. Peppery, just the way I like it! My husband raved! We had some pork left but, no bacon!

Bistecca alla Fiorentina (Tuscan Porterhouse)

I used sirloin because that's what I had, and I forgot the lemon. And my steak was a little tough even rare. I'll try it again. The marinade was delicious.

Simple Scones

I made the Cranberry Orange scones and they're absolutely delicious! I also made them gluten free substituting all-purpose flour with "Beth's gluten-free all-purpose flour" by Gluten-Free Pantry. They're not gritty at all. And I added a squeeze or juice from half an orange along with a couple tablespoons of the meat of the orange. I didn't have any flour left to roll out the dough, so I just sprayed a cookie sheet with olive oil non-stick spray and shaped the dough into the square and cut it. Then, I just spread the pieces out and baked! Delicious! I can't wait to have another one in the morning with my pumpkin spice coffee!

Cinnamon Belgian Waffles

I made these using my gluten free mix and they turned out nice and fluffy still. I left out the baking powder and soda since it was already in the mix. More cinnamon is needed for a cinnamon flavor.

Baked Parmesan Perch

Delicious! I also cooked it a little bit longer, until the edges started to get dark, and added lemon pepper and oregano to the bread crumbs. I served it with penne topped with sauteed red peppers, red onion, garlic, and asparagus and spinach in a butter/chardonnay sauce. It was AMAZING! My husband said perch is one of his new favorite fish!

Grilled Swordfish with Rosemary

Absolutely delicious! I went ahead and added the olive oil mixture to my baking dish and baked my swordfish at 350 for 20-23 minutes and flipped it halfway. It was my husband's first time eating swordfish and he loved it! I also only used 2 cloves of garlic because he doesn't like garlic quite as much as I do. It was still plenty garlicky!
