My favorite family cooking traditions
I picked up many Italian-American family cooking traditions from my ex's family. I love the idea of family meals eaten over the course of an afternoon--great conversation, no hurry to get somewhere else, lots of food courses. My family didn't eat this way, even for holidays. I think that people should take as much time to enjoy the food as it took to prepare it.
My cooking triumphs
Marshmallows; fudge; an original recipe using chocolate and strawberries that is much requested for gatherings.
My cooking tragedies
When I was a teenager my mom asked me to make some biscuits because we were having strawberry shortcake (we always used biscuits instead of cake). They were lovely--fluffy, risen high and golden brown tops. My mother was enchanted and decided to have one before dinner with some butter on it (they were warm from the oven). She took a bite and immediately gagged--I had used 3 TABLESPOONS of baking SODA not baking POWDER!! I was horrified, upset and determined I would never make biscuits again (I did make them again of course! LOL). By the way, my dad (ever frugal) STILL ate one with his strawberries! The berries turned the biscuits a dark purple!! LOL

Blueberry Coffee Cake I
This is baking right now...I made this both gluten and dairy free: Gluten Free Café All purpose flour blend; So Delicious Coconut milk beverage unsweetened original; 1/4 t guar gum; Earth Balance margarine for those of you interested. I also added both the juice and the zest from one lemon along with the vanilla. The batter tasted great! I will come back on after we've had this to let you know how it turned out! All done, and it tastes wonderful! Thanks for the recipe!

Chocolate Meringue Cookies
These are very light and airy--I didn't add the chocolate chips so there wasn't much "chew" factor as they melted in the mouth. Good flavor--I added a dash of cinnamon and a teaspoon of instant coffee along with a full teaspoon of vanilla, as well as reducing the sugar to 1/3 cup. Nice for a light, sweet taste of chocolate without a lot of calories or fat!

Fluffy Pancakes
These were lovely...light, fluffy, tasty! The only changes I made were to use Almond Breeze in place of milk and canola oil in place of melted butter (to make these dairy free). My family loved them, including my son who is fussy about his pancackes!! Thanks for a great recipe!
