Iced Pumpkin Cookies

I just made these and took a risk by substituting 1 cup of coconut flour for 1 cup of the AP flour, and luckily it paid off and they taste yummy. Please note you have to add 1 egg for each ounce of coconut flour, so I added 4 eggs to this recipe. I didn't make the frosting because I didn't want the extra calories, but I think that might be the lil' somthin' somethin' that my batch of these cookies are missing.

Chocolate-Banana Tofu Pudding

Very easy and tasty. I used two overripe bananas and that worked nicely. My tofu package was 14 oz, so I added a little extra of all the other ingredients, too. Added maybe 1-2 tbs of vanilla also.

Sweet Potato Enchiladas

A great way to use up sweet potatoes! I used maybe 4 or 5 potatoes, I wasn't concerned about having too much filling- we love leftovers! I agree that there isn't a whole lot of flavor, so I recommend doubling the spices and then adding more to taste. Made 18 enchiladas for us.

Exquisite Yeastless Focaccia

I liked this because it was very easy to make and we didn't need yeast or any unusual ingredients. The parm we bought ended up being bad so we didn't use that, and so that's probably why the bread didn't taste "exquisite" to me. But I think this is a good base for a potentially delicious and easy bread!

Traditional Style Vegan Shepherd's Pie

This is delicious! Used dairy products, including some low fat options. We did feel like the mashed potato layer was a little thick, so I'd suggest either using a wider dish, or maybe using less potatoes. Also the "meat" & veg part was pretty crumbly, so I wonder if there's a way to keep it together more... (haven't read the comments yet to see if someone else figured it out!)

Apple Brownies

Very tasty but for us at altitude I think this recipe needs some modifications. I didn't have a 9x9 pan so I used a muffin tin and the 'brownies' don't hold their shape at all. Next time I'll try less sugar, less butter and more flour. If using a muffin tin you don't need 35 minutes, more like 25.

such a great idea! i agree that the strawberries or the banana need to be frozen for the right thickness, unless you want something more like a juice. i added a squirt of agave nectar and used plain rice milk, and didn't need any extra sugar

Rhubarb Cake I

Such an easy and yummy way to use rhubarb! I only used a cup of sugar for the batter and it was plenty sweet. Also used plain yogurt instead of buttermilk. For the toppping I did 1/3 c. brown sugar, 1/3 c. oatmeal and ~2 tsp cinnamon. I forgot to put in the butter, but I probably wouldn't use 1/4 butter.
