Best Tuna Casserole

I made this exactly except omitted the mushrooms, giving 4 stars because it is a bit dry. But, I heated the leftovers next day with some milk and topped with sour cream, and it was delicious! Would be 5 stars if moister, so will make again with some added milk.

Indian Chicken Curry II

My first taste of Indian food, my son wanted to make it, and did. We used hot curry powder and didn't use the bay leaf. It was soooo good! The flavors of cinnamon, curry, and ginger were divine. We served it over Calrose rice. It was very easy to make and we really enjoyed it.

House Fried Rice

Perfect recipe for fried rice! It turned out great using freshly cooked rice (a big time saver) and even frozen veggies. Perfectly flavored for our family! I used meat and veggies I had on hand (ham, chicken, frozen broccoli, celery) and omitted peppers, peas, and shrimp. I just dumped in the chopped broccoli frozen and it cooked to perfection. It's such a flexible recipe. I also used 2 eggs.

Chicken Pot Pie IX

I made this per the recipe (except the celery seed) before reading the reviews. I'm giving it 5 stars because it was super delicious and easy to make, but maybe just a teeny bit dry and bland. After reading the reviews, I made three changes: 1. Cooked chicken and vegies in chick broth. 2. Made 1 1/2 amount of gravy, mixed the original amount of gravy with the chicken and vegies, added as much of the extra 1/2 recipe of gravy as the pie pan would hold and served the rest of the gravy on the side. 3. Added more seasonings (just what I had on hand) - more pepper, garlic powder, onion powder, basil, rosemary. If I had had poultry seasoning I would have used that too. And... tada! Even better!! I love this recipe.

Oatmeal Raisin Cookies I

Very good tasting cookie. I did not use extra flour, but did add extra cinnamon. The cinnamon was the only change I made. Used old fashioned oats, not quick. The texture was chewy, not crunchy. Bake at 375 for 9 minutes as per the recipe. I used parchment paper to line the baking sheets and had no problems with sticking cookies. These cookies are very rich tasting and highly addictive!

Chocolate Mint Cookies I

These are the best!!!! I love them sooooo much!! I have made them about 4 times since I discovered the recipe about 5 months ago. I just follow the recipe exactly, and they turn out every time.

Lemon Sauce I

Lemonade-Mint Iced Tea

Maybe I shouldn't rate this, because my friend was supposed to bring fresh mint from her garden and forgot when I had her over for lunch. I made it without the mint, and it was delicious!! I can't wait to try it with the mint, though, I imagine it will be even better.

Peach Pie

I just made this - and posted a picture! It's soo good and tastes fresh. I only used 7 peaches, and worked good for the pie plate I had. I still used the same amounts for the filling. I followed the instructions somebody suggested about turning the oven off and leaving the pie in - it was not overly juicy at all and turned out perfect. I did not add other spices, as I think the fresh peach flavor would have been masked somewhat. I brushed slightly beaten egg white on the lattice top and sprinkled with a little sugar. Thank you for the recipe! I used fresh local peaches from a fruit stand. They were soft, but not overly ripe.

Caramel Brownies II

I made these as per the recipe (except no nuts) and they were great. I'm reviewing them because I read the review that said they were too goopy and doughy, and right out of the oven that's what they were like, and I thought they didn't turn out. After cooling for about an hour, they turned more brownie-like, I was able to cut them and put on a plate, and they tasted great.. everyone said they were yummy!

Fluffy Pancakes

I made these for breakfast. It made 9 pancakes using a 1/4 measuring cup. This is the best pancake recipe I have come across so far, they are melt in your mouth fluffy and tender. Yum! We loved them.

Chocolate Cavity Maker Cake

I made this today, and it's amazing. I baked it for exactly one hour, then took it out without testing and it was perfectly done. I used light sour cream and did not have coffee liquor, so used a cup of plain old Maxwell House I had made this morning, not really strong, but not weak. It was sooooo chocolaty! No frosting needed. Also used mini chips as others suggested. Not sure I'll spend money on liquor since it was so good with just coffee next time I make it, and I will definitely be making this again.

The Best Lemon Bars

I made these and they turned out great. The crust is melt in your mouth tender. I added extra lemon juice to taste per my preference, but left all the rest of the filling ingredients the same. These are simple and very, very good.

Alyson's Broccoli Salad

This is the best broccoli salad I've ever tasted! (Everything's better with bacon.)! I always use red grapes instead of the raisins. I've made this multiple times over the past few years. It's become my "signature" salad.

Quiche Lorraine I

I've made this 3 times. First time as written, thus 4 stars for original. Too much 1/2 and 1/2, onions crunchy, a little bland. 5 stars using 1 1/2 cups of 1/2 and 1/2, saute onions with garlic. Prebake pie shell 6 min at 400. Seasoned one time substituting 1 tsp nutmeg for red pepper, the next time omitted sugar doubled red pepper and added 4 drops Tabasco. 2nd and 3rd times were perfectly delicious!

Rempel Family Meatloaf

We've made this about 3 times. Every bit gets eaten and everyone loves it! I use A-1 steak sauce and we don't sift out the powder in the soup mix, as it doesn't seem too salty for us. This is THE meatloaf recipe from now on. Love it!

Downeast Maine Pumpkin Bread

This is very good, moist, flavorful. I used 2 9 x 5 pans and baked it for 65 min, as another reviewer did. Also used 2 tsp of pumpkin pie spice in place of the ginger, nutmeg, and cloves in top of the 2 tsp cinnamon. We thought it was good warm, but even better the next day. I mailed the extra loaf to a friend for some fall cheer!

Quick Chicken Divan

Great recipe! I used double the chicken, 1 cup of mayo, the juice of an entire lemon, and 2 tsp curry. Mixed some bread crumbs with a little butter and sprinkled over the cheese. Served with rice and salad, everyone loved it. We'll be making this many more times!
