Grandma Johnson's Scones

more like a muffin than a scone - cutting way back on the sugar, and eliminating the egg would make it more like a true scone. also, it makes me crazy when one of the "most useful" reviews tells readers to let the butter come to room temperature so that it can be creamed with the sugar. scones are meant to be flaky, which requires cutting cold butter into flour. creaming is a technique used in cakes and cookies...

Raspberry Buttermilk Muffins

these are PERFECT as written! it makes me crazy when the top rated review of a recipe tells readers to do exactly the wrong thing, as is the case with this recipe. DO NOT add an extra egg, DO NOT add more sugar, and DO NOT add vanilla extract! this is a muffin recipe, not a cupcake recipe!! if you feel like your batter is too thick, add a bit more buttermilk, but the fresh raspberries add moisture, so extra buttermilk really shouldn't be necessary. and fyi - 1/2 cup sugar is 2 teaspoons per muffin...2nd day update: these are also excellent the second and third days.

terrific! use it to make cheese bread or pizzas on the grill! i'm adding to my review...i had to reprint this recently, and while i was waiting for the printer i read some of the recent reviews. so, i added the 1/2 tsp. baking soda which did give the bread a nice bubbly texture. i used yogurt instead of the milk--gave it a nice tang. i also replaced 1 1/2 cups of the white flour with wheat (to get in some whole grain!) hard to believe that one of my favorite recipes could be improved on, but it was! thanks for the suggestions. also, i sometimes replace the water with beer-gives it a nice yeasty flavor...

Garlic Chicken with Orzo Noodles

this, was very good but i only gave it four stars because i think it would have been sort of blah without the additions that i made.the amount of chicken is sort of vague, so i used an 11-oz. breast. i added a red and an orange bell pepper, cubed, some thickly sliced mushrooms, and doubled the spinach. following the advice of another reviewer, i cooked the orzo in broth until it was creamy, and i covered the pot after adding the spinach to help wilt all the extra spinach. it was very colorful, with lots of complimentary tastes and textures.

Chicken Bryan

omg...i love this dish at the restaurant, and the home version does not disappoint. i was tempted to say that there is too much lemon juice, but after tasting the sauce with the basil and tomato, on the chicken, i have to say that it is nigh on perfect! (though a more accurate measure, i.e., 3Tbsp, would be preferable to the non-specific "juice of two lemons!") i will be making this again! now, can we get them to post their recipe for chicken santa rosa? i should add that while the amount of chicken and cheese is for one serving, the sauce is enough for 6 servings!!

Pineapple Mango Pie

outstanding!! i've made it twice now in just a week, and my family just loves it. i did substitute coconut rum for the apple juice (it seemed like such a nice, tropical thing to do) and i may cut back on the sugar next time i make it--the mangoes i have been getting are exceptionally sweet. thanks for the addition to my repetoire.

Gingerbread Biscotti

i have to strongly disagree with firefly's recommendations. first: biscotti are an italian cookie, and italians rarely use butter in their cooking. and honestly, for those with cholesterol issues, oil is the better choice anyway! second: there is no reason to change the directions for mixing the dough. most cookie recipes call for mixing fat and sugar, then adding eggs and any liquid flavorings, and last mixing in the dry ingredients (which have been stirred together) about 1/3 at a time. do not mix thoroughly each time you add the dry ingredients - you should still see a bit of unmixed flour when you add the next bit. that being said, these are wonderful cookies! i did add some chopped pecans and raisins that i soaked in triple sec before mixing in - i like little crunchy, chewy nuggets in my biscotti - and i dredged the slices in cinnamon sugar before the second baking, to give them a bit more crunch. even my rather fussy 18-year old likes these!

very good indeed! substituted 1 c. of coconut for raisins, and added 1/2 c. chopped walnuts. baked cookies for 6 minutes, then flattened with a spatula and baked 4 more minutes.

Sausage Pasta

this was very good, and extremely easy. i added 1/4 c. white wine after the onions and garlic were browned, substituted chicken sausage for the pork, fresh spinach for frozen, and about 1/3 c. chopped fresh basil for the tsp. of dried. next time, i think that i will add some sliced mushrooms.

very good. i added about 1/2 tsp whole peppercorns to the stock, and cut the ground pepper in the soup to 1/2 tsp. another reviewer suggested adding a diced potato to the soup, which was a nice addition.

this was excellent, but i halved the bacon and doubled the cheese, eliminated the sugar (1/4 tsp. in a quiche? who would even know it was there?), and used white pepper instead of cayenne.

Cinnamon Sour Cream Biscuits

excellent! admittedly, i did make a number of changes, but none of them changed the essential proportions, which is the most important part of a biscuit recipe. i used butter (why anyone would every use margarine is beyond me), replaced 1/2 white flour with whole wheat, and because i was mysteriously out of raisins, i used craisins. i don't like frosted baked goods for breakfast, so i brushed the tops with butter and sprinkled the biscuits with cinnamon sugar before baking which gave them a nice crunch. i can't wait to make them again (maybe even with raisins!)
