Baked Pretzels

this was ok--i had some beer to use up and my daughter loves soft pretzels. while they were reasonably tasty, they didn't really taste like pretzels...

Rum or Bourbon Balls

so far, so good. just finished them, so they haven't aged yet, but they taste darned good at this point! i made them lots smaller--used my #40 scoop to portion, then cut those balls in half--i ended up with almost 6 dozen. also added the raisins recommended by another reviewer, and rolled them in a mixture of 1/2 10X sugar and 1/2 cocoa powder.

Haitian French Toast

this rocks! nice bright flavor for a cold winter morning. i made 1.5x the recipe because it didn't look like it would be enough for my 1-lb. pugliese loaf, but there was enough custard for that loaf plus a .5-lb. whole grain loaf with still some left over (i'm thinking it will turn into bread pudding!) i did add about a tbsp. of triple sec, but that was the only change i made.

Sweet, Sticky and Spicy Chicken

excellent--even my extremely picky daughter chowed down on it. one reviewer said that it was good with pork instead of chicken; i would bet that it would also work well with beef. more thoughts at a later date: since sticky chicken is almost always made with chicken thighs in chinese restaurants, i made it that way, which means that the chicken doesn't dry out while the sauce thickens. added carrots, onion, and sliced red and green peppers - very tasty. agave syrup can be substituted for honey, and using sriracha hot sauce ensures the heat!

Sweet Potato Casserole II

my daughter made this yesterday, and it was very good. my youngest, who rarely tries anything new, ate three helpings! she didn't whip the potatoes, but mashed them slightly, leaving large chunks which gave a nice textural interest.

Roast Sticky Chicken-Rotisserie Style

mmmm good! the cooking time seemed to be off--i took the birds out at 4 1/2 hours instead of the 5 called for in the recipe, and the breast was dry and the legs disintegrated when i tried to remove them. the chicken was quite tasty though--i think that i may use the rub on my turkey this year, and let it "marinate" over night. ** it came out great, and the gravy was the best in years!!**

Chicken Breasts Pierre

well, i made 2 minor, and 1 major alteration to this recipe: for the minor changes, i used a can of diced tomatoes instead of stewed, and i replaced the white vinegar with balsamic. for the major change, i made this with swordfish instead of chicken--it was pretty good. the sauce sort of overwhelms the fish, but for those who are trying to get their families to eat more fish, this might be a good meal to start with. served it with couscous, but any grain would do also.

Whipped Shortbread Cookies

terrific recipe!! i heeded the advice of previous posters and reduced the temperature slightly (about 325). for a gilding the lily version, i pressed chopped pistachios into the top before baking and drizzled some melted semisweet chocolate over them as soon as they came out of the oven. seriously yummy!

Pineapple Mango Pie

outstanding!! i've made it twice now in just a week, and my family just loves it. i did substitute coconut rum for the apple juice (it seemed like such a nice, tropical thing to do) and i may cut back on the sugar next time i make it--the mangoes i have been getting are exceptionally sweet. thanks for the addition to my repetoire.

Bob's Cinnamon-Oatmeal Pancakes

i'm with hamsalad--too thick, wouldn't cook through. and the vinegar gave them a slightly weird flavor. first daughter only ate one, second is sitting here with two bites of the first one left--daughter #2 just scraped her plate. oh well, they sounded good...

terrific! use it to make cheese bread or pizzas on the grill! i'm adding to my review...i had to reprint this recently, and while i was waiting for the printer i read some of the recent reviews. so, i added the 1/2 tsp. baking soda which did give the bread a nice bubbly texture. i used yogurt instead of the milk--gave it a nice tang. i also replaced 1 1/2 cups of the white flour with wheat (to get in some whole grain!) hard to believe that one of my favorite recipes could be improved on, but it was! thanks for the suggestions. also, i sometimes replace the water with beer-gives it a nice yeasty flavor...
