Whole Wheat Pumpkin-Applesauce Muffins

pretty good as a base recipe. i used neither applesauce nor canned pumpkin; i was wanting to use up some baby food, so i used a cup of random baby food fruits in place of the pumpkin and applesauce, and followed the rest of the recipe exactly. very tasty.

Oatmeal Craisin Cookies

very good indeed! substituted 1 c. of coconut for raisins, and added 1/2 c. chopped walnuts. baked cookies for 6 minutes, then flattened with a spatula and baked 4 more minutes.

delicious. i forgot to add the garlic and bay leaf, and i added a cubed sweet potato. i'm just sorry that my crock pot wasn't large enough for me to double the recipe so i could stick a batch in the freezer!

Cinnamon Sour Cream Biscuits

excellent! admittedly, i did make a number of changes, but none of them changed the essential proportions, which is the most important part of a biscuit recipe. i used butter (why anyone would every use margarine is beyond me), replaced 1/2 white flour with whole wheat, and because i was mysteriously out of raisins, i used craisins. i don't like frosted baked goods for breakfast, so i brushed the tops with butter and sprinkled the biscuits with cinnamon sugar before baking which gave them a nice crunch. i can't wait to make them again (maybe even with raisins!)

Spicy Tuna Fish Cakes

while i wouldn't call these spicy, they were pretty good. i used up some leftover mashed potatoes instead of cooking up a new one, and i cooked them in garlic butter mixed with olive oil. i served them with a yogurt/cucumber sauce, and my 2-year-old granddaughter loved them!

Beer Rolls

i used a full bottle of beer, and it still wasn't enough for 4 cups of flour. i added about 1/4 more liquid, and ended up with a very nice dough. the recipe also needs more salt to bring out the bread's flavor.

Grilled Tequila-Lime Shrimp

i dislike it when people don't follow recipes and then review based on their adaptations. however...i planned on making this today, but upon reaching into the freezer to pull out the bottle of tequila that i've had for a decade or longer, i discovered that i actually had two bottles of very cold gin. so, i made it with gin, and got rave reviews. who knew? some day i may have to try it with tequila, but it's pretty darned good with gin!! :-)

South of the Border Salad

nothing better than ok...and it makes more like 12-16 servings, which means it's an awful lot of "just ok" salad to have around... update: i ended up throwing away the leftovers. (something i almost never do!) unlike most bean and corn salads, which only get better over time, this salad became inedible after sitting overnight. the onion flavor became overly pronounced, to the point that green onion was the only distinctive taste. i'm taking away a star.

Raspberry Buttermilk Muffins

these are PERFECT as written! it makes me crazy when the top rated review of a recipe tells readers to do exactly the wrong thing, as is the case with this recipe. DO NOT add an extra egg, DO NOT add more sugar, and DO NOT add vanilla extract! this is a muffin recipe, not a cupcake recipe!! if you feel like your batter is too thick, add a bit more buttermilk, but the fresh raspberries add moisture, so extra buttermilk really shouldn't be necessary. and fyi - 1/2 cup sugar is 2 teaspoons per muffin...2nd day update: these are also excellent the second and third days.

Grandma Johnson's Scones

more like a muffin than a scone - cutting way back on the sugar, and eliminating the egg would make it more like a true scone. also, it makes me crazy when one of the "most useful" reviews tells readers to let the butter come to room temperature so that it can be creamed with the sugar. scones are meant to be flaky, which requires cutting cold butter into flour. creaming is a technique used in cakes and cookies...

Zucchini Brownies

i would like to give these 5 stars, but i think the recipe needs a little tinkering. this was my first time making them, so i'll update as i make changes. *** these really improved after sitting overnight. the first day they were crispy/chewy around the edges, but otherwise sort of crumbly. the next day, after being covered with aluminum foil overnight, they were uniformly moist and fudgy/chewy, and stayed that way for two days (it's possible that they could have retained that texture longer, but they were all gone by then!)

i doubled the butter to 4 tbsp. and it was still a bit tough, even without kneading. otherwise, this was quite good. i'll try it again with a touch more liquid, as i think that it had to be stirred too much to get all the dry ingredients incorporated; hence the toughness.

Old Fashioned Paradise Pumpkin Pie

this is a wonderful pie - my daughter has made it twice this year! i would give it five stars, but i really want the pecan topping to be more like glazed pecans (like the top of a pecan pie), and less like a crumble.
