very good. i did not have the rice wine vinegar, so i substituted some mango vinegar that i had been given. it went well with the ginger, and i also added shaved carrot strips as another reviewer suggested. next time i'll try with the rice wine vinegar.

Fresh Strawberry Scones

while these were pretty good, there were also a few problems. first, they are way too sweet to be authentic scones. while the lemon zest was a nice touch, it was sort of overwhelmed by the nutmeg. should i try them again, i will cut the sugar in half, eliminate the nutmeg, and substitute buttermilk for the cream.

Sausage Pasta

this was very good, and extremely easy. i added 1/4 c. white wine after the onions and garlic were browned, substituted chicken sausage for the pork, fresh spinach for frozen, and about 1/3 c. chopped fresh basil for the tsp. of dried. next time, i think that i will add some sliced mushrooms.

Garlic Chicken with Orzo Noodles

this, was very good but i only gave it four stars because i think it would have been sort of blah without the additions that i made.the amount of chicken is sort of vague, so i used an 11-oz. breast. i added a red and an orange bell pepper, cubed, some thickly sliced mushrooms, and doubled the spinach. following the advice of another reviewer, i cooked the orzo in broth until it was creamy, and i covered the pot after adding the spinach to help wilt all the extra spinach. it was very colorful, with lots of complimentary tastes and textures.

Harvest Pork Stew

very good. i made it mostly as written; used fresh squash and fuji apples, 'cause that's what i had on hand. the 40 minute cooking time is way too short - a minimum of two hours would be more accurate. otherwise, it was good enough that my daughter who doesn't eat pork, and her boyfriend, who doesn't eat fruit and meat together, both polished off their bowlfuls. this made 8 servings, which comes out to 7 pts on ww, for anyone who is interested.

Spinach Noodles

i used this recipe more as a "jumping off" guide, using what i had on hand. 4 egg yolks took the place of two eggs, which meant that i only needed 1 1/2 cups flour. i mixed the dough right in the processor (no need to dirty another bowl!) and kneaded lightly. i rolled the dough very thin, and cut it into skinny ribbons. cooking the noodles only took about 3 minutes (15 minutes would have yielded mush.) my only regret is that i didn't make a better sauce for these wonderful noodles!

Bread Machine Bagels

excellent bagels! unlike other posters, i did not make fewer bagels from this dough; i made more - eighteen to be exact. who needs a gigantic 300 calorie bagel? wanting to have some whole grain, i ground up 1/2 c. rolled oats to replace 1/2 c. flour. i also added a "glug" of molasses to the boiling water as suggested by other posters. didn't bother with the egg white (boiling the bagels in sugar water isn't to make them sweet, folks; it's to make them shiny!) about 20 minutes baking time was about right, even with the smaller size.

Beer-Baked Irish Beef

quite good. i did not add the allspice (it sounded weird), the marjoram (don't keep it around), and i used guiness "black lager". rather than try to squeeze cubed potatoes into my stockpot, i served the stew over mashed potatoes, which the family seemed to enjoy!

Split Pea and Ham Soup II

very good. i added about 1/2 tsp whole peppercorns to the stock, and cut the ground pepper in the soup to 1/2 tsp. another reviewer suggested adding a diced potato to the soup, which was a nice addition.

Favorite Banana Blueberry Quick Bread

this was really good, though i took so many liberties, largely due to what i had on hand, that i'm going to end up sounding like those "reviewers" that i hate. i had never substituted applesauce for fat before, but thought this might be a good place to try; i doubled the blueberries (i'm not a blueberry fan, but even i could tell that 1/2 c. was not enough!); i put regular rolled outs in the mini processor and chopped them fine; i had ground pecans leftover, so i used them; i used 1/2 brown sugar; high altitude adjustments of 2 T flour and 3/4 t. soda; 12 mini loaf pans for 25 min. 2 1/2 bananas was about right for 1 c. mashed. i'll definitely make this again!

this was excellent, but i halved the bacon and doubled the cheese, eliminated the sugar (1/4 tsp. in a quiche? who would even know it was there?), and used white pepper instead of cayenne.

Cowboy Macaroni

i tarted this up a bit: i used a can of diced tomatoes with chilies instead of sauce and paste, i added diced red and green peppers and garlic, spiced it up with some oregano, chili powder, and hot sauce, and lastly shredded some cheddar cheese over the top. pretty tasty!

Apple Strudel Muffins

these were better than i thought they were going to be. i hadn't noticed that there was no liquid in the recipe until the batter was mixed, and i very nearly added some milk. i'm glad that i didn't, but the batter really is more like that for a drop cookie than a muffin. (maybe i'll try these as cookies sometime!) i added about 1/4 tsp of cinnamon to the batter, along with 1/2 c. finely chopped pecans, and i used granola instead of the crumb topping - much quicker, and guaranteed to be crunchy!
