Stacey's Fabulous Purple Potato Gratin

extremely good. 8 potatoes is a sort of vague amount, so i weighed 8 average blue potatoes (which are fairly small) and came up with 1.25 lbs, which seems about right for 4 servings. i used feta, as the goat cheese i had on hand is $24/lb...not using that for peasant potatoes! a half an onion was a fine substitute for the unavailable leek, and i didn't attempt to cook the mixture together before baking - it seemed like a silly and slightly redundant idea. the end result was amazingly creamy and crispy at the same time. i will make this again with different potatoes and cheeses; i've got a block of smoked gouda that i think would be divine!

Mexican Baked Fish

this was really good. i used haddock, and because i'm always calculating nutritional values, i made the measurements more specific: i used 2 oz. of grated cheddar, and 28 grams (it's a serving size!) of white tortilla chips. when i put it on the table, i forgot about the sour cream and avocado, and it was quite good without, but once i added them it was delicious!

Black Bean Stuffed Peppers

added 1 c. cottage cheese, and substituted 1/2 diced onion, sauteed in oil with a clove of garlic for the dried onion (yuk!) i also doubled the cumin. ended up with enough to stuff 4 peppers generously. i baked them for 30 minutes before topping with grated cheddar so that it would be melted and bubbly. topped with sour cream and diced avocado, it was delicious. next time i think i will bake it in tomato juice or a spicy tomato sauce to amp up the flavor a bit.

Thai Green Curry Chicken

pretty good. i used boneless thighs, because that's what i had on hand, and light coconut milk for the same reason. i added lots of veggies, which i suspect watered down the curry flavor, so next time i will add more, but i think the curry flavor would have been just right without the veggies.

Sweet And Sour Chicken Meatballs

i saved this recipe, but because it was a decent base, not because it's a great recipe as is. the sauce was bland, so i added garlic, ginger, and soy sauce to it. the meatballs are also bland, so they got some chopped garlic, ginger, lemon pepper, and hoisin sauce. instant/minute rice is inedible, so i served it over baked brown rice. my granddaughter loved it, but if i make it again, i will probably make more adjustments to the sauce and add some more vegetables.

Easter Buttermilk Hot Cross Buns

pretty good. made these in the bread machine, but basically followed the recipe. used butter instead of margerine; tried to chop raisins in 1/4 c. flour, but they stubbornly refused to be ground up. baked them in 2 9-inch sq. pans, 9 to a pan, brushed with egg wash for shine. they were almost too light and airy - i think i would have preferred a somewhat more dense and chewy texture.

Salisbury Steak with Mushrooms

pretty good. i used only a 1/2 tsp of salt because i thought a whole tsp seemed like way too much, but then found myself wishing it had a bit more when we ate dinner. i'll probably split the difference next time and use 3/4 tsp. i also used an entire 8-oz. basket of mushrooms as we really like them. i added a small amount of garlic with the mushrooms and onions to increase the depth of flavor in the sauce. i'm thinking that next time i might also add some worcestershire sauce and/or a little red wine. as a basic recipe this is fine, but it needs some tweaking to make it really good.

used pistachios, because i had a bunch of them, and i added about 4 oz. of chopped dark chocolate. i love that the dried cherries are left whole - it gives them a wonderful texture.

as other reviewers have said, too much dough for the amount of jam. i baked this in a 9-inch pan, and used 8 oz. of jam. about 25% less dough would probably be about right.that said, the flavor was good.

Hearty Ham Casserole

i really wish there was a was to indicate that a review is massively UN-helpful. i can't for the life of me figure out how the "most helpful critical review" (who basically created her own recipe) ended up with a soupy casserole. the proportions for the sauce as written yield a nice, thick bechamel; in fact, after adding some grated cheddar to the sauce, i had to add more milk and it was still very thick. that being said, the idea of using corn in this was not appealing to me, so i used two boxes of frozen spinach, squeezed dry and chopped (it was roughly equal in volume to the can of corn). i also put some garlic bread crumbs on top, along with the grated cheddar, for a nice crunchy texture. this was very good, and i look forward to having lunch leftovers!

Chewy Peanut Butter Crisps

these were quite good - i refrigerated the dough/batter before baking, and after the first pan nearly burned, i adjusted the time down to 8-9 minutes, which got them browned, but not hard. i am at a higher altitude, so that made have made a difference. these were also better the next day.

Stuffed Zucchini with Chicken Sausage

the filling was tasty, but really gooey, and the baking time wasn't nearly long enough. after 35 minutes, the zukes were still hard. this might be better without the breadcrumbs, and baked covered with a little water in to bottom to steam the squash, but i didn't like it well enough to try it again.

Apricot Orange Syrup with Amaretto

made it with peaches, only cooked it for about 45 minutes, and skipped the whole cornstarch thing (just a silly idea-it's plenty thick without!) very sweet, but i think i may make a large batch and can it for the winter months. it was very yummy over pancakes.
