Tilapia Soft Tacos with Chipotle Cream

Delicious! This is one of my new favorite recipes! Folllowed the recipe almost exactly, except I mixed the chipotle cream sauce in my food processor, as that was much easier than having to mince and mix myself. Also, my fish took a little longer to cook, and I had to turn it over to help in the process. I used the regular iceberg lettuce I had for the greens, then used some diced tomatoes and shredded cheese for the tacos as well. YUMM!

Four Cheese Margherita Pizza

YUMMM!!!! Incredibly tasty as is, but I also experimented a bit as I had a few other things in my fridge to get rid of. I sauted some leftover spinach in a little olive oil and added that to the pizza when I added the tomatoes. I also brushed pesto on half of the crust while sticking to the olive oil marinade on the other half. My husband liked the pesto half even better, but it depends how strong you want the taste! I didn't have fontina cheese, and it was still delicious. DEFINITELY a keeper!

Rich and Simple French Onion Soup

Delicious! I don't usually like French onion soup much, but my husband does and orders it at restaurants all the time. My neighbor grows onions and gave me some, and as I sat there wondering what to do with a few huge onions, I decided to give this a try! As I said, I often find French onion soup to be just ok, but this was DELICIOUS! A few tips: YES, toast the French bread before using. Much better when it is not completely soggy! In my opinion, saute the onions. I think that step helped me to like the soup so much more. And lastly, make sure you have enough broth. Much of the broth soaks into the bread when you bake it, and you don't want to end up with mostly onions on the bottom!
