Spanish Rice II

This is the perfect Spanish rice, and so easy! I make it pretty much as written, which is unusual for me. :) I saute the onion and bell pepper for a few minutes before I saute the rice, and use mild canned tomatoes and chilis. I've also tried using celery intead of bell pepper - it's very good that way too.

Chicken Noodle Casserole

This dish was just OK. Plus it takes way too much time to prepare for the quality of the end result. You could do from-scratch chicken pot pie in the time it takes to make this. Casseroles should be easier than this, in my opinion.

Hearty Brown Quick Bread

This was pretty good sweetbread - but you definitely need to use the size pan called for. Maybe this is because I used smaller pans, but the insides did not get done, even though I checked with toothpicks (which came out clean)! Just a word of warning - carefully check to be sure it's done!!!

Delicious Ham and Potato Soup

Wow - this is delicious! And I'm not usually a huge soup fan. I added extra onion, because I love it, and also added a little extra salt and pepper and some celery seed (just personal taste). Definitely a keeper.

Mother's Ham Casserole

Delicious! I made this with extra bell pepper and onion (lots extra cause I love them!). Also lightly salted the potato mixture before boiling. Turned out great! Only thing I would change is the amount of butter - turned out very rich. Next time I'll sautee the ham and veggies in a tad of veg oil instead.

Baked Oatmeal Squares

These have a good taste, but they completely fall apart - no "squares" about it. You have to eat it with a spoon. I may try it again and add an extra egg and a little bit of whole wheat flour.

Spiced Honey Pretzels

These are really good, but they are a bit bland as written. I double the butter, add an extra Tbsp. of honey, 1/4 tsp. cayenne pepper, and a Tbsp. of dijon mustard. Microwave honey mixture for about 20 seconds before pouring over the pretzels. When I take them out of the oven, I toss and coat with about 2 Tbsp. sugar. Otherwise, they just aren't sweet enough.

Fluffy Pancakes

Fabulous - oh my goodness are these good! I substitute canola oil for the butter, but do everything else the same. I also make several "dry" batches up at a time and store in plastic bags - that way when I'm ready to make them, all I need to do is put in the wet ingredients.

Dry Ranch Style Seasoning for Dip or Dressing

Wow. This was gross. At first I cut back on the pepper and seasoned salt as many suggested - and it was gross. Then I added the rest of the salt and pepper - still yucky. Don't make this unless your taste buds are all dead.

Tasty Lentil Tacos

Wow! These taste as good or better than actual tacos! I didn't have fresh garlic, so I subbed garlic powder. I used one standard size can of garlic flavored chicken broth, plus one cup of water. I also added a little cayenne, black pepper and paprika. I also added the salsa at the table instead of combining with the mix. Delicious!

Apple Crisp II

Great recipe! I make this all the time, but I keep the peels on the apples. Gives it extra texture and keeps more of the nutrients in there. It's also great with pears!
