Pot Roast, Vegetables, and Beer

Excellent and easy recipe. I did add in some celery and I subbed in a little ketchup for the tomato paste out of necessity. It still gave me the subtleness that the paste offers, so I was pleased with that. I did not have a dark beer, so I used just a standard light beer, which worked fine. I only had a 2 pound roast and after 2 hours, this was done perfectly. I let rest for 15 minutes and sliced up and it was fork tender and the veggies perfect. I will use this recipe again. Thanks!

Shrimp and Asparagus with a Louisiana Twist

I made this as directed and found it lacking in flavor. I tasted the distinct flavors of the veggies and shrimp. Tthe only change I made (after I made it as written) which made it 5 stars to me was add in some Cajun seasoning. I'm guessing I added in 1/2 or 3/4 of a teaspoon. I will probably make this again with my change. Thanks!

Eggplant Parmesan II

This was our first time trying eggplant and the recipe was overall very good. Many of the reviewers recommend baking the slices for longer than stated in this recipe and I think that would have taken a lot of the "toughness" out of the eggplant. I used half of my own sauce with half store bought sauce. My sauce alone would have been too meaty. I will make again with longer bake time on the slices.

Amish White Bread

My first attempt at a plain white bread and it was fantastic. This recipe is sweet, but not too much. I could possible see reducing the sugar by about 1/2, but it is definitely just an option left up to personal tastes. I made this using my KA stand mixer and that went well. I added flour slowly as directed and ended up using the full amount as stated in the recipe, plus a little for dusting the counter for final hand kneading.

Fajita Marinade

Very nice marinade for fajitas. I made this with beef and marinated for 6 hours or so. I would probably double the cumin next time I made it, but otherwise I'd leave it as is. I think this would have been even better with chicken. The customized recipe in my recipe box has the cumin doubled.

Chicken Tortellini Soup with Broccoli

I made exactly as written and found it very bland and way too much liquid for the amount of tortellini and veggies. Before I served it I decided to double up on the broccoli, but that still wasn't enough to give it any kind of body. I felt the cream of chicken soup added nothing to this recipe and definitely wouldn't use that again. If I was to make again, I'd double up on the carrots, broccoli and tortellini for sure. An extra cup or two of chicken wouldn't hurt either. I would also probably cut back the water to 2 cups or less. Pepper would be a nice addition, but I'm ok with leaving it out and letting the individuals decide on how much they want at the table. As written, we had to salt our bowls because this was very watery. That was disappointing especially when you look at the sodium levels already in this dish. This soup does have elements of greatness, but I feel the proportions are way off.

White Bean and Tomato Salad

I made this tonight for a side. My missus has a thing for kidney beans, so I used them instead of Cannellini beans. The other thing I changed was I add some green peppers just for color. This was a great dish and a perfect side. I will make again.

I came across this nice delish dish on the lead up to St. Patrick's day, but waited until today to make it with a baked ham. This might be intended as an Irish dish, but it's perfect for any meat and tater day.

Lemon Basil Grilled Chicken

I made this for a cold chef's salad. I subbed in dried basil, but otherwise followed the recipe. I marinated for 45 minutes or so. This came out perfect and was excellent on the salad.

Wonderful recipe. With the exception of adding onions, I followed the ingredients exactly. I did not soak the cukes overnight and I don't really think that part is necessary. I will make again.

Braised Corned Beef Brisket

This is my first time making a corned beef brisket and I'm happy my friends from the buzz recommended this recipe. I followed Baking Nana's advise and triple-foiled the brisket. It was fork tender and tasted wonderful. I had a small brisket of 2.5 pounds and this was done in 4 hours. I don't think you could over-cook it using this method. Thanks for helping make my first brisket perfect!

The Irish Potatoes

I made as directed and they came out perfect, although it never did bubble as the recipe stated. My family thoroughly enjoyed this dish. When I make again, I will be increasing the amount of onions, otherwise I will leave it as is. Thanks!

Jalapeno Ranch Dressing

This is wonderful. I followed the recipe exactly, except I used homemade ranch dressing from their own buttermilk packet. I made this to put on beef fajitas, but it will be excellent for dipping just about anything into. Thanks!

Pickled Garlic - Spicey

My 3 weeks are finally up. I really liked this and will make nice munchy food for me. I do not own a spice bag so just dumped them in and that seemed to work ok. I also added in some jalepenos. I liked them in there, but would probably put in more next time. I did the full 5 minuted boil and I think the texture was about right. The color was a little green, but that was ok by me. I expected it to be more tart. I would probably use cider vinegar next time.
