Classic Pickled Eggs

I love this recipe. I made a batch with the recipe as written and made another with jalapenos. Both were fantastic. The brine has a perfect taste for me, but it could be easily customized for individual tastes.

Creamy Pesto Shrimp

Excellent recipe. I did cut the butter in half and used a full pint of half and half instead of heavy cream for the healthier aspect. This dish would have been even more fantastic if I would have stuck to the recipe with the butter and cream. I also added in half an onion, half a red pepper and half a green pepper shortly before adding the Parmesan. The onion I have to have, the peppers were pretty much just for looks and texture. I also added in a couple shakes of cayenne pepper which I think really added to the flavor. The base recipe needs none of the improvements that I made, but I did like them with it. I will make again.

Easy and Healthy Chicken Florentine

4 and a half stars. I feel that salt and pepper are an option in every recipe and as one reviewer wrote, most of the flavor is from the sauce, so make sure you have a good one before you move on. I liked the way it came out except it was on the watery side from the spinach. I will most likely make this again, but I will remove the foil half way through the bake time.

I used this recipe as a base for my veggie quiche and it was excellent. I will use this again. Besides the veggies, what I did change was that I added 1/2 cup of flour and this made it pretty light and fluffy. Also, after I sprayed my pan with Pam, I dusted it with flour. The quiche came out clean and neat and nothing stuck to the pan. I strongly recommend doing that.

Kick'N Chicken with Mango Salsa

I made the recipe as directed but used poultry seasoning. That was simply wrong for this recipe. I wish I would have read the reviews before I had made it. I plan to make again using a different seasoning and adding some jalapenos to the salsa, and maybe a bit of lime.

Slow Cooker Bacon-Ranch Beer-Can Turkey

I doubled the amount of ranch per butter for under the skin, and increased the sprinkled butter over top some, but not a lot. I did this because another reviewer said that they could not taste the ranch. With my increases, the taste of the ranch was faint and I felt it more increased the saltiness, which was not really desired. However, the overall taste of this turkey breast was wonderful and the breast was juicy. I would not increase the ranch over what this recipe calls for again. I have to admit that half-way through the cooking procedure I was a bit skeptical. It really didn't smell that great. But when the time was right, the flavor was there. However, I wouldn't quite rate this 4 stars, but more like 4.6 or so, just enough to tip it to 5. A turkey, slow cooked looks pale, mushy and unappealing. Add bacon and it looks worse. After it was fully cooked, I put this under the broiler to brown up just a bit. I feel this recipe needs that extra step. Don't expect a big ranch flavor with this recipe because you won't find it. But you will find a nice balanced flavor that yields a tender juicy bird.

This is a pretty danged good base recipe. I would like them crisper than what this recipe gives me, so I think next time I will pan fry as this recipe calls for, but finish them off in the oven.

I followed the recipe exactly and the procedure worked flawlessly, however, we were lukewarm about the flavors in this. I think this recipe is perfect and needs no alteration, but it just wasn't "us", if that makes sense?

Best Pork Chop Marinade

Excellent marinade. Came out perfect. I found that this was enough for four small chops. I used a vacuum sealer marinade attachment to speed up the marinade time and that worked great for this recipe.

Spinach Lasagna II

Wonderful recipe. It was quick and easy to make with great results. I did make my own pasta sauce rather than use a packet, but otherwise that was the only change. I think next time I may remove the foil the last 15 minutes, just to brown up the cheese a bit.

Blueberry Cheesecake Muffins

Very good tasting muffins. For some reason, mine got a little big, so they weren't real pretty. On top of that, when I pulled them from the oven, my grip slipped just as I was going to set them down, so they went flat too. In spite of all of the problems that I created for this recipe, they were fantastic and I am pretty sure that I will be making them again. Thanks Cheerios!

Pickled Eggs

I'm a huge pickled anything fan and I wasn't disappointed in this recipe. Super easy to make and a good use for your eggs that are getting a little long on fresh. I did not vary a bit from the recipe except that I did a dozen eggs and used quart jars, 6 in each. Oh, and I've never ever seen white wine vinegar in my store, so I was forced to use red wine vinegar. The funny part to me was that even though I loved the eggs, I did not like the brine. Usually in these recipes, I love the brine so much that I can drink it. But that will not stop me from making this again. I think next time I will increase the vinegar and decrease the water so that I have an even more intensive pickled flavor in the eggs. Thanks bd for a great recipe!

Quick Pickled Jalapeno Rings

I made this recipe as written and it's very good. The jalapenos do lose some of their bite with the sugar, but they are still quite hot. Mild enough that you can eat these plain, out of the jar, but hot enough that one or two is enough. When I make this again, I will have about 1/3 of the jar with sweet red pepper.

Pot Roast, Vegetables, and Beer

Excellent and easy recipe. I did add in some celery and I subbed in a little ketchup for the tomato paste out of necessity. It still gave me the subtleness that the paste offers, so I was pleased with that. I did not have a dark beer, so I used just a standard light beer, which worked fine. I only had a 2 pound roast and after 2 hours, this was done perfectly. I let rest for 15 minutes and sliced up and it was fork tender and the veggies perfect. I will use this recipe again. Thanks!

Shrimp and Asparagus with a Louisiana Twist

I made this as directed and found it lacking in flavor. I tasted the distinct flavors of the veggies and shrimp. Tthe only change I made (after I made it as written) which made it 5 stars to me was add in some Cajun seasoning. I'm guessing I added in 1/2 or 3/4 of a teaspoon. I will probably make this again with my change. Thanks!
