Master Sauce Ribs

Reviewed: Oct. 5, 2014
Very good sauce. I followed the ingredient list exactly except did not specifically use Kikkoman branded products. Some were, some weren't. As far as the recipe goes, I did not marinade, bake or grill as directed. Instead I dumped everything in a slow cooker and let it go. This resulted in a very nice Teriyaki rib. The sauce had largely become liquid with the melted fat from the ribs. It was not gooey like you would expect from a rib sauce, but that was just fine, the flavor was there. The meat almost looked as if there was no sauce on it at all. I would like to try this on ribs again using a more traditional procedure to give me that gooey goodness that goes with ribs. I've had a request to use this sauce again on chicken breasts. I think the possibilities are endless. I served with lo mein and fried broccoli. I slow cooked on high for about 3 or 3 1/2 hours and low for another hour. When the meat starts working up the bone, they are ready.

Mountain Apple Cobbler

Reviewed: Sep. 21, 2014
Very good. I followed Cookin in Holland's suggestions and that made this perfect. We don't eat this type of food often, but I wanted to try this unique recipe and I'm glad I did. I didn't really expect great results using canned crescent rolls and Mountain Dew, but I was surprised how great this was. Thank you!

Marinated Mushrooms

Reviewed: Aug. 31, 2014
I originally made this for my mushroom loving daughter who is at college. She hated it because of the vinegar flavor. However, I've continued to make it several times for myself. I like it best the next day, and that's generally how I eat it. I have been telling my buddies about these mushrooms and I told them that I think that they'd be great deep fat fried. I followed the recipe exactly again, except this time, instead of leaving my onions in slices (because I like to eat them too) I put everything (except the mushrooms) in a blender to get as much flavor into the marinade as possible. Then last night we breaded them in a store bought onion ring batter and deep fat fried them. They were incredible. That took this recipe and brought it to another level. You gained about another 6 fans last night. I shared with them all this recipe. I'm sure that it will be popular at all the camp sites this summer. Thanks again for a fantastic recipe.

Veggie No Boiling Lasagna

I've made this a few times now and it's a pretty good recipe. One star missing for the sauce - sorry Ragu. I make my own and that makes this a 5 star recipe.

Pesto Spaghetti Squash

Pretty danged good, but found the red pepper to be a bit much. I think half, or less would have been better for us.

Zucchini Pickles

Reviewed: Aug. 29, 2014
Great recipe. Fantastic taste and relatively easy to make. I wish the slices were crisper, but they were good. The only other issue is that this will not make 3 quarts or pickles, more like 1 1/2 or 2 at best. The brine was the perfect amount for 2 quarts. I don't have canning equipment, so I stopped after step 3. I then let jars rest until sealed, then will refrigerate until they are eaten. I think if I wanted crisper slices, I could dump the hot liquid on the slices in the jars, then seal.

This is a really nice light tasting dish that just feels fresh when you are eating it. I can't explain that, it just does. I can definitely see me making this again. Thank you BW!

Taco Salad

Reviewed: Aug. 16, 2014
Excellent recipe as is, but I did change some to give it a more taco-like flavor. I added a dash or two of cayenne pepper and a couple shakes of black pepper. I also added in about an 1/8 of a teaspoon of cumin. Lacking chips, I opted for a soft shell taco and this was excellent. I will definitely make again. ***Update*** My better half was not here when I made this, but she had it as leftovers the next day. She is a bit of a taco salad fan, perhaps even fanatic. She said that this was the best she has ever had, and we've had zillions. We served this over Nacho Cheese Doritos chips on day 2. One side note: I feel this recipe serves more than 2. More like 3 or 4. Thanks!

Monkey Bread Kabobs

Reviewed: Aug. 10, 2014
Great recipe ShoreCook! Instead of the cherries, I used maple sausage. I had fully cooked the sausage first and did the kabobs on a gas grill using a grilling mat. That worked fantastic. I won't lie, the whole procedure is a bit tedious and messy, but the end result is definitely worth it. When everyone finally found their way out of the campers, they were greeted with this. They loved it and asked me to do it again, and I will, but with help!

Easy Chicken Fajita Marinade

Reviewed: Jul. 31, 2014
I made the marinade as directed and thought it needed more lime. I probably had 4 or 5 tablespoons in it by the time it was done. I also added maybe an 1/8 teaspoon of salt. We liked this very much on our chicken.

Matt's Chicken Adobo

Real good. I did this in a foil tray on the grill. When they were all done, I removed from the liquid and grilled just until I had grill marks. Other than that, I followed the recipe as written.

Grilled Avocados

We found these fairly bland, but I like the basis. When I try again, I will slice, and season the slices individually to get a bit more flavor. I think Cajun would be good on this.

Classic Pickled Eggs

I love this recipe. I made a batch with the recipe as written and made another with jalapenos. Both were fantastic. The brine has a perfect taste for me, but it could be easily customized for individual tastes.

Creamy Pesto Shrimp

Reviewed: Jul. 14, 2014
Excellent recipe. I did cut the butter in half and used a full pint of half and half instead of heavy cream for the healthier aspect. This dish would have been even more fantastic if I would have stuck to the recipe with the butter and cream. I also added in half an onion, half a red pepper and half a green pepper shortly before adding the Parmesan. The onion I have to have, the peppers were pretty much just for looks and texture. I also added in a couple shakes of cayenne pepper which I think really added to the flavor. The base recipe needs none of the improvements that I made, but I did like them with it. I will make again.

Easy and Healthy Chicken Florentine

Reviewed: Jun. 30, 2014
4 and a half stars. I feel that salt and pepper are an option in every recipe and as one reviewer wrote, most of the flavor is from the sauce, so make sure you have a good one before you move on. I liked the way it came out except it was on the watery side from the spinach. I will most likely make this again, but I will remove the foil half way through the bake time.

Crustless Caramelized Onions and Cheese

Reviewed: Jun. 29, 2014
I used this recipe as a base for my veggie quiche and it was excellent. I will use this again. Besides the veggies, what I did change was that I added 1/2 cup of flour and this made it pretty light and fluffy. Also, after I sprayed my pan with Pam, I dusted it with flour. The quiche came out clean and neat and nothing stuck to the pan. I strongly recommend doing that.

Kick'N Chicken with Mango Salsa

Reviewed: Jun. 27, 2014
I made the recipe as directed but used poultry seasoning. That was simply wrong for this recipe. I wish I would have read the reviews before I had made it. I plan to make again using a different seasoning and adding some jalapenos to the salsa, and maybe a bit of lime.
