Cheese enchiladas! Apparently my Grandpa got the recipe from Mexican Inn, but it's still special! lol I've since made up my own recipe, but enchiladas are definitely a family tradition.
My cooking tragedies
I don't know about cooking tragedies, but I did have one decorating tragedy. My first time doing a big customer order, I definitely didn't manage my time well at all! Needless to say, a wrecked kitchen and total breakdown later, I managed to get most of the order together and delivered, but it wasn't complete. Fortunately it was for an extended family member, so although a disappointing experience, could have been a lot worse.

Cake Mixes from Scratch and Variations
I guess I will give this 4 stars because I used another user's recommendations. I made the white cake, but used oil instead of shortening (I NEVER use shortening as it's just an abomination). I mixed the wet ingredients in one bowl, sifted the dry ingredients into another bowl, and whisked the egg whites in a 3rd smaller bowl. I then folded the dry mix into the wet mix, and then folded the eggs into that mixture once all flour was wet. The batter made 15 cupcakes. They were fluffy, moist, and very vanilla-y, unlike a box mix that tastes extra sugary sweet. The first time I made it, it came out very dense, but flavorful. I tried again immediately after and realized I had accidentally added too much flour the first time (I was using a cup that was 2/3 cup, with 1/3 cup marker but filled it to 2/3) . The second time it came out perfect! I had also used up the last of my 2% milk on the first try, so I used almond milk on the second and it turned out great! This was my first real success at making a cake from scratch. I can't wait to experiment with the flavor!

Homemade Black Bean Veggie Burgers
Before making this recipe, I never had more than a single bite of a black bean burger. I wasn't very impressed with the one that I tasted. This recipe is delicious! I don't know if all of the measurements wound up being exact, but I did use all of the same ingredients (minus the onion) and added a little extra here and there to taste, adding the egg last. I had no problem with it holding together. I allowed the beans to sit in a strainer for about 10 minutes, and then froze the patties for about 20 minutes while I worked on sweet potato fries. I then grilled them on a George Forman. The patties were fairly spicy and delicious, and I paired them with a homemade avocado spread on a toasted wheat bun with lettuce and thin slice of tomato. Yum!

Easy Decadent Truffles
These are delicious. I love them and so do my boyfriend and 3 other friends who have tried them so far. I followed the recipe exactly but, as suggested by others, added 2 Tablespoons of heavy whipping cream. The recipe yielded 70 balls just under 1 inch wide before dipped in milk chocolate. I used hershey chocolate chips, semi-sweet for filling, and milk chocolate for dipping, as requested by my sister whom I made them for. On each truffle I sprinkled either chopped walnuts, coconut, or shaved 60% Ghirardelli chocolate. I also made (am making) myself a second batch to take to Thanksgiving, but separated about 1/4 of the filling before flavoring, to which I added 1/2 tsp of orange extract for a delicious orange flavored chocolate. I can't wait till Christmas so I can experiment with more flavors!
