Penne and Vodka Sauce

Delicious delicious delicious. I didn't have any bacon or pancetta available so I just omitted it - made no difference, I'm sure. I also added shrimp when I added the sauce. Perfect amount of time for it to cook. So good. I went back for seconds!

Corn and Rice Medley

Fabulous recipe. All I had on hand for a side dish was jasmine rice and frozen corn - this recipe made a delicious side dish appear out of thin air. Love love love it.

Spinach Stuffed Chicken Breasts

Fantastic recipe. I changed a few things to my tastes - egg instead of mayo, goat cheese instead of feta (highly recommended!), and fresh spinach. I had trouble with how messy the mixture was so next time I think I'll refrigerate it for an hour beforehand. I also seasoned and oiled the chicken. Halfway through baking, I poured out the bacon grease - this made the bacon crispy. The chicken was just a tad dry so I'll probably turn down the heat a little bit next time. Overall, extremely enjoyable recipe with lots of possibilities. This is a definite new favorite.

Baked Buffalo Wings

I loved the idea of baking the wings - so much healthier! I followed all of the instructions except when it came to baking. Frank's RedHot suggested I bake the wings at 500 degrees for 20 minutes AND THEN dip the wings in the sauce (so sauce after baking) and I thought this might clear up the issue regarding soggy wings. It set off the fire alarm for being too smoky, so next time I'll bake em longer at a lower setting. But they were perfectly crisp! So my suggestion - don't add the sauce until the end :)
