Sweet Potato Chicken Casserole

I give this 5 stars, but it must be noted that I made a lot of adjustments according to the suggestions: I added 1 Tbs ginger with the garlic and onions and also used a Moroccan spice when cooking the chicken to add some flavor to the dish...I also added chopped pumpkin with the carrot and sweet potato because I needed to use it up! Since everyone talked about how watery this dish was I cut back the liquid to one cup and about 3/4 cup wine plus I put in 3/4 cup uncooked rice to help soak up the fluid and to make it more of a casserole. About 30 min. into the cooking it was getting quite dry so I added in another 3/4 cup liquid salt/pepper and let it cook for another 15 min. This was beautiful!! My only comment for next time is that I will try and use a dryer wine. I only had a Sav so that's what I used, but I think it made it a bit more sweet....Overall a great dish and something different!!

Kickin' Meatballs

I made this tonight for my husband with mashed potatoes, roasted vege and steamed brocolli. Perfect combo and FABULOUS recipe. We will DEFINITELY have this again. I only used a small portion of meat, one egg, and eyeballed the other ingredients on the list, but this turned out amazing. I also baked mine in the oven as suggested. Thanks for sharing this great recipe!!

Eggplant Parmesan II

Fabulous...I just made this for myself, so only used one eggplant and made my own tomato sauce - canned tomatoes, garlic, basil, oregano, sugar, salt/pepper, sundried tomatoes, tomato paste....I also salted my eggplant before using and that seemed to be good. I followed the advise on here and cooked it for longer than 5 min on each side.....This turned out perfect, was really easy, and I will definitely make it again! Thanks for the recipe!!

Hariton's 'Famous' Vegetarian Casserole

This recipe is fabulous. I just made it tonight. I definitely cut this recipe down to 1 each of the vegetables used as I made this for myself alone. The roasted garlic really made a huge difference and this turned out to be fantastic. I just used the concept of this recipe - not measuring the herbs and such - I did soak the eggplant as suggested. I will say that when I added the water half-way through I added too much, but now I know for next time. I simply drained it at the end....I did add a tiny bit of Parmesan cheese to the top during the last half. I also found that the vegetables were more than cooked at 2 hours and I pulled them out. (Most likely because I had a much smaller portion.)

Lentil Quiche

This is by far one of the best quiche recipes I've every had...I love that there is no pastry!! After reading the other reviews I also increased the spices....Using fresh herbs - parsley, coriander, basil - and dried oregano and sage....I also added a little nutmeg and think I will put even more nutmeg next time. I also only cooked the lentils for about 15 min. and stir-fried my onion to save time. This was just a fabulous dish!! Thanks so much for sharing!

Italian Spaghetti Sauce with Meatballs

I have used this recipe so many times over the past year - but just now got on as a member to review.....This is the best recipe ever! I love that you just put the meatballs right in the sauce - definitely adds flavor. I also use the sauce recipe for all of my red sauce dishes. I always use a nice red wine to add a little flavor as well. Just a great dish!
