OH man where do I start... I guess the biggest tragedy is that I don't try exciting new things enough. I have a few things that I'm comfortable with and tend to stick to them. I'm slowly branching out though :)

Chewy Peanut Butter Brownies
I made these with butter instead of marg and a thin layer of Rich Chocolate Frosting also from AR. A great breakup treat for my roommate! These are really tasty without the choc, but sometimes girls need a bit more decadence :)

Cream of Fresh Asparagus Soup II
I am eating this right now :) I made the recipe as-is and it is really good. If you use skim milk and reduced fat sour cream it's pretty healthy and it was really easy to make too. I might up the asparagus or lower the sour cream to make it more intensely asparagus-y though. I think bacon or ham would be nice in it too. If you can, use homemade chicken stock. My guy made some over the weekend and I think it makes a great difference!

Eggplant Parmesan II
Oh man this was good. I did put a few twists on the base recipe but it was great. I used a couple of food-processored cans of fire roasted tomatoes with around 7 large basil leaves instead of premade sauce. I also seasoned my own panko breading instead of premade crumbs. I snuck some zucchini in with the eggplant - yum! And I also picked up a small nub of a dry italian cheese from my grocer's artisan cheese extras basket. I guess my point is that you can customize according to what is in your own cupboard. I served it with a Malbec and it was nice :)
