I believe this is one of the best key lime pie recipes I've found! I didn't realize how good this pie could turn out with the absence of eggs, but it did. I made my own graham cracker crust, used two cans of sweetened condensed milk as others have posted, and substituted greek yogurt for the sour cream. Since I do not own a citrus juicer, I just bought organic lime juice in the bottle. I also added four True Lime packets as I like a very tart pie (personal preference). I would say the most time consuming part in my opinion is making the graham cracker crust. But after preparing the crust (I let it sit in the refrigerator an hour before filling), the rest of the ingredients come together in no time at all. The cook time of 8 minutes is probably about right even though I let it sit in the oven for 10 minutes. After chilling, I decorate it with a homemade whipped cream border and enjoy.
