Apple Stuffed Chicken Breast

Reviewed: Oct. 16, 2009
loved it! the sauce was wonderful! i used plain breadcrumbs and added some cinnamon with the apple mixture. the only thing i think may add a little more to the recipe is a little bit of salt, maybe in the form of some small bits of ham or bacon.

All American Apple Pie

Reviewed: Oct. 17, 2009
very yummy...but it was a bit too sweet. i don't know if it's because i used empire apples instead or if the filling had too much sugar. and there was way too much crumb topping. i used some of the suggestions and added some cinnamon and nutmeg.

Veronica's Apple Pancakes

Reviewed: Oct. 21, 2009
I doubled the cinnamon, added 1/4 tsp nutmeg, and instead of shredding the Empire apple, I diced it. I liked the texture but my boyfriend didn't, although he did like the flavor. Next time, I'll try shredding it instead and add more sugar.

Chicken and Mushroom Saute

Reviewed: Oct. 21, 2009
Really flavorful! I added some red wine to the mushrooms (I always love the flavor I get from adding wine). The chicken was still moist in the inside. I will definitely use this recipe again!

Old Fashioned Chicken and Dumplings

Reviewed: Oct. 27, 2009
Good but seemed too salty even though I still used unsalted butter. I will use this recipe again but I'll just adjust the salt and add more broth to make more sauce.

Churros

Reviewed: Oct. 27, 2009
I always wanted to make these! I really liked the flavor and it was super easy to do! It was gobbled up in no time! Had some left over cinnamon and sugar though. Next time, I'd cut down how much sugar I used to coat them. Maybe instead of rolling them in the sugar mixture, I'll sprinkle it lightly over top. Also, I made small thin ones that were yummy and crunchy, but they ended up curling up while cooking in the oil. I wonder if I make them bigger if they'll stay straight. But overall a great recipe..definitely a keeper!!

Overnight Raisin Oatmeal Pancakes

Reviewed: Oct. 28, 2009
Loved them!! I'll be keeping this recipe close at hand! Instead of leaving the oatmeal mixture overnight, I mixed it and let it sit in the fridge for 20mins as suggested by another reviewer. Also, I substituted raisins for cranberries, and added walnuts. I doubled the cinnamon and made buttermilk with 2tbs lemon juice with 2cups milk. For an added touch, I sliced an apple and cooked it in a saucepan with some butter, and a few shakes of nutmeg and cinnamon, until it softened. This made a nice topping for the pancakes. I was happy my boyfriend loved it; he didn't like the texture when I chopped up Empire apples and incorporated it into the batter, but he liked it better as a topping. Very happy with this recipe. It'll be fun changing it up with bananas, coconut, and cherries!

Spanish Flan

Reviewed: Nov. 29, 2009
Loved this recipe!! I added an extra egg which made the perfect consistency! I used some of the other reviewers' tips such as adding a few drops of lemon to the carmel mixture and baked in a water bath (my mom used to cook it this way). My boyfriend who is very particular about his flan absolutely loved it!! He could not stop raving about it and getting more helpings!! I will definitely make this again! I was not too sugary as some flans tend to be. It did take a little while to get the carmel to melt and loosen out of the pan though.

Orange-Honey Glazed Ham

Great recipe! Used it for our thanksgiving dinner! Nice option instead of doing the traditional pineapple ham!

Cranberry Pork Chops II

Reviewed: Dec. 2, 2009
Great recipe! I actually used some of my leftover cranberry sauce and some fresh cranberries to make this. It turned out very moist and tender! My boyfriend thought the cranberry flavor was a bit strong but I liked it! yum!

Sea Bass Cuban Style

Reviewed: Dec. 4, 2009
Very nice! But the caper flavor was a tad bit strong. I omitted the olives since my boyfriend absolutely hates them, and I added crimini mushrooms. I'll cut down on the amount of tomatoes next time though.

Carrot Cake III

Reviewed: Dec. 5, 2009
i'm a first time carrot cake baker and it came out just perfect! i followed the instructions as is except i added a 1/4 tsp of nutmeg. my boyfriend is an avid carrot cake lover and he puts this way up on his list of best ones he's ever had. it was perfectly moist and the icing goes very nicely with it--not too sugary either!

Double Layer Pumpkin Cheesecake

Reviewed: Jan. 31, 2010
I never made cheesecake before but it was easy and everyone loved it! I would recommend adding more of the cheesecake layer, maybe a 1/2 cup more to have a more even layering with the pumpkin. I added choc. chips to the cheesecake layer too! delicious!

Very nice! Light and moist, gorgeous color! Although if not eaten right way, it starts to dry up on the outside quickly.

Good but can be improved upon. Maybe adding something to make it more savory next time like garlic or other spices to up the flavor.

Chocolate Crinkles II

Awesome! So light and fluffy! Couldn't stop eating them. Followed other reviewer's advice about scooping the batter directly into the powdered sugar and then rolling into balls. It was much easier to handle.

Baked Pork Chops I

Reviewed: Feb. 12, 2010
Good. Added some cayenne pepper for some kick. Next time will definitely make more sauce and maybe just heat the mushroom sauce in a saucepan and put it on top the last 15mins. of baking so it will still retain a little bit of crunch.
