Vera Cruz Tomatoes

Great way to use tomatoes! I modified only slightly by adding a little pepperjack cheese to the sour cream mixture, then topped with cheddar - I let them sit for 5-10 minutes after they came out of the oven - served with garlic bread - and it made for a nice light meal! Will be making again soon!

Ranch Pretzels and Goldfish

Awesome recipe - I've been making them for a couple of years. The only differences are I don't add cayenne (but I might try) and I don't add cheddar fish! If you can't find butter flavored oil reg oil will do ok, but it's the butter flavor that is awesome! Thanks for posting this recipe!

Stir-Fried Vegetables with Chicken or Pork

Awesome! I modified slightly to what vegi's I had on hand. I warmed pre-cooked chicken in a little bacon fat, along with 2T oyster sauce and approx 4 cloves of minced garlic (I like garlic!). When it had warmed I added approx 1C carrots, 1C celery, 1/2lb snow peas and 1C green onions - no extra salt needed! At the end I doubled the cornstarch/water/soy sauce mixture - served with Jasmine Rice - So good no one would know it's homemade! Tastes just like takeout! The family loved it!

Creamy Pesto Chicken and Bow Ties

Modified slightly, didn't add chicken, made with rotini pasta, also added about 1/4 cup of rocota cheese and 1/8 cup of cream cheese - EXTRA CHEESY-CREAMY PESTO PASTA....very good!

Slow Cooker Beef Stroganoff I

I loved this recipe! I took other reviewers suggestions of substituting 1/2 cup onion with 1 pkg of dried onion soup. Instead of water used 1 can of Beef Consume. I added some garlic powder and some onion flakes. Also added sour cream with the cream cheese! The family loved it! I can't wait to make it again! I think I'll double it next time! YUM YUM YUM!!!!

Layered Chicken and Black Bean Enchilada Casserole

I had to slightly modify due to what I had on hand. I used pre-cooked chicken, lime & green chili refried beans (instead of black beans) mixed together, then added the cilantro and chopped green onions and a little chili powder to Mexican Sour Cream along with the green chilis - layered like a lasagna - a little enchilada sauce, corn tortillas, chicken/refried bean mixture, cheese and then sour cream mixture - at the very end I topped it with american cheese slices along with cheese to melt in the oven - turned out great! Will make again - hopefully I can try it closer to the original recipe!

Take-Out Fake-Out Pollo Con Crema

slightly modified this recipe - servings were for 4 - reduced the chicken to 1 breast half but used about the same, maybe added extra, for vegis - didn't use heavy cream, used 1%, didn't use ketchup, used tomato sauce, I also added just about a 1/2-1 tea of chili flakes - REALLY, REALLY good....I'm excited to make again....served with rice, left out the tortillas....
