Waffles I

Reviewed: Oct. 22, 2013
The best waffle recipe I have found to date. Have adapted to our own preferences and according to my kiddos "the best waffles ever". If you want a crispy waffle, then try using virgin, unrefined coconut oil instead of vegetable oil. Also we prefer buttermilk waffles so I will add just a bit of regular milk so thin out the batter. Once you have the basic mix together, you then add any fruits, nuts, berries, or chocolate chips. Such a hit for breakfast!

Zucchini-Chocolate Chip Muffins

Reviewed: May 3, 2012
Great alternative to traditional muffins. I did sub both 1/2 applesauce and 1/2 canola oil for the amount called for. Also used equal parts combination of unbleached a.p. flour, whole wheat flour, and almond meal. Additionally used 1/2 amount of turbinado sugar. Turned out fabulous. (16 servings size)

Best Chocolate Chip Cookies

Reviewed: May 3, 2012
How many times do you need to read this is a great cookie on these reviews? It really is the Best! Here is how I make it personal: mostly organic ingredients and changed the butter to a half butter and half organic, unrefined coconut oil mix. Perfect cookie every time. No more store bought cookies. Yes, letting the dough sit for a while in the refrig only make it a better cookie. Takes little effort and time too!

Poppy Seed Dressing II

Reviewed: Aug. 26, 2011
Great tasting recipe. I lessened the sugar and put the onion in my food chopper until it was mush. Can't wait to put on my salad tonight. BTW, best from a lady at church romaine, chopped g.s. apple, red onion, feta & poppyseed dressing. Great on summer nights.

Mandarin Orange Cake I

Reviewed: Aug. 17, 2011
Fantastic cake! Great for a summertime treat. I too added orange extract to both the cake and the topping. I also wanted a more "fruitful" dessert so I put more oranges (sans juice) and cut up dark cherries on top of the cake and them added the topping. Wow, it was a hit at my dinner social.

Neat Sloppy Joes

Reviewed: Jul. 11, 2011
Love this basic recipe. I too prefer less sugar and use only 1/2 if that. I never use the tomato soup and simply use 1 can of diced (no salt) tomatoes and blend it up. I was without ketchup tonight and used bar-b-q sauce instead. YUMMY!

The Best Rolled Sugar Cookies

Reviewed: Jan. 12, 2011
Love this cookie! Tastes great and so easy and quick to make. My go to recipe. Made it again today with a twist. Looking for my vanilla extract and saw the orange instead. Added a few drops of orange extract and had a whole new orange cookie!

Corn Dog Muffins

Reviewed: Aug. 10, 2010
My family loved this one. A fun recipe for all who like corndogs. I used Jiffy brand corn muffin mix, therefore no need to add sugar. Also added chopped green chilis in 1/2 of the them for added kick. Will also add as a lunch box favorite. Thanks for the idea!

Steff's Shepherd Pie

Reviewed: Jul. 30, 2010
Great recipe for a start and then added to eat to make this a family favorite. Browned the ground beef with onion and minced garlic. Used 1/2 cream of mushroom soup and 1/2 golden mushroom soup. Also added more variety of frozen veggies. Topped with homemade garlic-buttermilk mashed potatoes, no cheese. Was very delicious.

Meatiest Vegetarian Chili From Your Slow Cooker

Reviewed: May 21, 2010
Wow! What a great recipe. Thank you for sharing this one. I did add the Morningstar Farms recipe crumbles as well. Also used 1 can black beans & 1 can of dark kidney beans, as well as no salt added, organic canned tomatoes. Next time I will omit the oregano and use cumin, fresh cilantro and a bit of lime juice for more of a TexMex flavor.

Triple-Cheese Macaroni

Reviewed: May 8, 2010
I really just used this recipe as a guide, used subs, and the result was very tasty. No evap milk and just used my 1%. Did use the velveeta and sharp cheddar, but also added muenster and feta. Only used 1 egg instead. Nice & creamy texture with a sharper taste.

Orange Cake

Reviewed: May 2, 2010
We loved this one!! I actually made cupcakes instead and they turned out moist and delicious. Also used the vanilla pudding and orange extract instead. Topped it off with drizzles of icing made with powdered sugar, orange juice, and orange extract. Saw where one person added cranberries and would love to do that when the fresh ones are in season. YUMMY!!

Great recipe for my husband's favorite cook-out side. Used only 1/2 of the sugar amount and it was still very sweet.

Hamburger Steak with Onions and Gravy

Reviewed: Mar. 19, 2010
Thank you for the recipe! I did add more seasonings b/c my family loves bold flavor. I tripled this recipe since lean ground beef was on sale this week and put the rest in the freezer for lunches and another meal. Next time will add mushrooms to the gravy. It even beat out my husband's fave choice of the same at a local diner. Delicious served over brown rice.

Southern Pulled Pork

Reviewed: Mar. 17, 2010
Loved by the entire family. The cooking process was easy. Only a few minutes to prep with the browning process and then spent the day in the crockpot. Instead of the cajun seasoning, I just used our fav seasoning instead. I actually had a very lrg pork roast and filled 2 crocks. On to the freezer with what we didn't eat for additional meals. Meat was moist and fell apart. Delicious!

Restaurant-Style Buffalo Chicken Wings

Reviewed: Oct. 17, 2009
This was a Winning recipe on TX/OU game day!! Lots of flavor and lots of compliments on these. My first attempt at any Buffalo style wings/drums. I did use the drums because I wanted more meat. Baked instead of frying to cut out the extra fat and calories. I did coat the chicken drums with buttermilk first and sifted with the flour mixture for a lighter crust. As many have suggested, I did let them sit 60 mins. in the fridge before putting them in the oven-I think this was the key to the finished texture. They crisped up nice in the oven and then I coated with the sauce and let them crisp up again in the oven for a few minutes. Also repeated the sauce and let them crisp up one more time. Absolutely perfect texture and taste. Used less butter and more Franks Hot Sauce. Easy to make and fun to share!
