Grandma's Coconut Corn Flake Cookies

I made creme brule earlier in the week, so I had egg whites to use up. This recipe caught my eye, because of the corn flakes and coconut addition to a standard meringue cookie...That said, by dropping by rounded tablespoons, I only ended up with 30/cookies versus the 60 the recipe suggests. I cooked them for 2/hours at 212 degrees on non-stick foil. They were crunchy and delicious!

Exquisite Pizza Sauce

Made this sauce 7/22/12. Our son said it was the best pizza sauce he had ever had! He said this was the only pizza sauce he ever wanted to have on pizza. We used it on grilled pizza!

Thai Steamed Mussels

YUMMO....I modified somewhat, 2 T Madras curry powder for red curry paste, and 2 T minced garlic because we love garlic. This is a keeper...Fastastic...Served with slices of toasted french baguette to soak up all the juices, and also bought 4/lbs of mussels vs. 5

Roasted Okra

Yummo! I love to roast vegetables, but honestly would have never thought to roast okra. I roasted the whole pod, and then simply munched on them, tossing the stem. Ate them hot and cold....Definately will make again!

Chickpea Curry

I would rate this as good. Had very good flavor! I didn't crush the cinnamon, but just broke up and took out the pieces when we ate it. Were we suppose to eat the cinnamon sticks?

Strawberry Oatmeal Breakfast Smoothie

Modified to ingredients I had on hand. used 1 c milk, 1/4 c oats, 1/2 frozen banana slices, 1/4 c frozen blueberries, 2 packets splenda, and 1/2 tsp vanillla. As another reader stated, I too, blended oats first to break up. Yummo....made 1 serving for me!!!

Chicken Breasts with Balsamic Vinegar and Garlic

I made this last night. I was disapointed. The dish tasted ok, but I was expecting to be more wowed by it. I like the balsamic flavor, but the chicken seemed soggy with the fried flour. If I made again, I would either not brown the chicken with flour, or keep the chicken separate after browning, so the outside chicken is crisp. My family ate it, but noone was thrilled.

Curried Cauliflower Soup

I just finished making this soup. I used curry powder vs. curry paste, because that is what I had on hand. That said, I find the taste to be pretty bland. I'm not sure what I can add to add to improve the taste.

Banana Cranberry Muffins

Yummo. Sweet and tart. I made with less cranberries....a heaping cup and 1/2 C sugar and water. Next time I will use per the recipes as the cranberrries really cook down. I also sprinkled the tops with white sugar crystals. Will definately make again.

'Day Before Payday' Kielbasa and Corn Hash

Yummo! My husband kept saying, "can we have this everyday?"....I added 2 sweet potatoes which added color and flavor. I just used 1 med. onion and 1 green pepper vs. buying frozen...I will definately put this recipe in the "keeper" file.

Easy Roasted Red Pepper Hummus

I modified this. I did not use basil. I added 1/2 Tsp. of ground cumin and 1/4 tsp. cayanne pepper and 1/4 tsp. salt. I only used 2 T lemon juice, and 1 T tahini, and 1 T olive oil....

Butternut, Apple and Yogurt Soup

I made this 10/18/09...I omitted the cinnamon, and added 6 finely chopped fresh bay leaves. I also only added 1 1/2 cups of yogurt vs. the 2/cups the recipe called out for. The bay leaves definately added more flavor. The soup was very rich and creamy. I would make again!
