Banana Crumb Muffins
These muffins are fabulous! As suggested, I also used 1 cup white flour and 1/2 cup wheat flour, and added 1/2 tsp. of cinnamon to the flour mixture. Instead of white sugar, I used brown, 2 eggs instead of 1, added 1 tsp. vanilla to eggs. All ingredients were mixed by hand not beaten; the flour mixture in one bowl and the 3 bananas/sugar/butter in a second bowl. Eggs slightly beaten with vanilla were added to banana mixture and then into flour mixture. I sprayed nonstick muffin pan-regular sized, added batter, ground fresh nutmeg atop each muffin and baked in oven for 20 minutes at 375 degrees. My recipe made 10 muffins. In the last 6 minutes, I added the crumb topping as suggested. They turned out perfect and the crumb topping had a nice crunch! Thank you :)

Red Velvet Cupcakes
Very yummy! The changes I made-cake flour instead of all-purpose, added less food coloring than directed, and I did add 1 tsp. of distilled white vinegar. For the frosting I added another 1/4 cup of butter making it 1/2 cup, added a small amount of whipped cream and some extra powdered sugar. For the cream cheese, I used an 8 oz. container of whipped cream cheese instead. On top, I garnished with chocolate chips.. Baked the cupcakes in a gas oven for 21 minutes. Might have been slightly better at 20 minutes. Thank you!

Roasted Pumpkin Seeds
These are the best pumpkin seeds I've ever roasted. So simple and yet, absolutely perfect. I had 3 cups of raw pumpkin seeds- 3 med/small pumpkins. Melted 2 Tbs. unsalted butter, poured butter over bowl of seeds and mixed with a spoon. Next I placed all the seeds on one cookie sheet and sprinkled with salt. Placed them in 300 degree gas oven and cooked for 45 minutes, stirring every few minutes. These seeds are beautifully golden and possess an amazing crunch! A perfect fall snack. Thank you!
