Spinach Quiche

This quiche gets me compliments every single time. We used olive oil (just the amount needed to saute) instead of all that butter. And we used 3 parts whole milk and 1 part half and half at my mom's suggestion. We skipped the mushrooms because I hate them. I don't know about the other reviewers, but this seemed to fit my 10 inch diameter, 2 (?) inch deep glass pie pan (tart pan?) pretty much perfectly. I used a premade crust from the refrigerator section of the grocery. My didn't turn out like the featured picture, with the spinach at the bottom and eggs on top, it was kinda all blended together and actually VERY pretty. Lovely recipe. Thank you!

Megan's Granola

I can't say enough about how much I love this recipe. I've been wanting to make homemade granola forever and this is my first introduction. I have made a number of alterations based on the reviews, but I love how many ways you can mix it up! It comes out fabulous each and every time. This is exactly what I was looking for. Thank you.

Quinoa Tabbouleh

We love this recipe. It is so colorful, flavorful, light but still filling. We served with fresh Pita and avocado slices and my husband slathered his pita with hummus before filling it up with the tabbouleh. We did make some changes based on another recipe we had looked at and what we had on hand at home: we used only 1/8 cup oil, used "grape" tomatoes instead, added about 1/2 cup canned garbonzo beans (deskinned), instead of parsley which I hate we used 10 leaves of chopped mint, also a dash of cumin, 2-4 cloves of garlic and some crumbled feta. We will probably make this for the rest of our lives we love it so much. Thanks!

The Best Vegetarian Chili in the World

We are trying to eat more vegetarian and this recipe is exactly what we were looking for. I skipped the meat substitute, and the chile peppers and jalapenos (just served on the side). We used frozen corn. Instead of chili powder and canned tomatoes I just used the canned tomatoes with chili seasoning already in them. It turned out perfectly mild but with plenty of flavor. We have a 3 year old and so this is exactly what I was hoping for. Adults added the heat they wanted. We served with sour cream, cheddar cheese, and avocado. My father in law went back for seconds! The next day, when I told him it was vegetarian, he was surprised and impressed. Thank you, this is a perfect family recipe that we will return to time and time again.

Bean Soup With Kale

Add a cup of quinoa! I used this recipe to modify the recipe that came on the back of my "Bob's Red Mill" 13 bean soup, which called for 1-1.5 Tbsp Chili powder as the seasoning. Final combo-recipe worked out great. Thank you, the Kale and the garlic (I ended up using a whole head) helped turn it into a lovely flavorful vegetarian meal - my husband was impressed with all the flavor, despite no hamhock/chickenbroth!
