Many Meals Pot Roast

LOVE LOVE LOVE! We have made this several times now. We usually skip the celery (or just do a bag mix of frozen diced celery, carrots, & onions) and add in some cubed potatoes. We usually don't make the sandwiches after, but we do save some of the leftover meat & juices to mix with some penne & can usually stretch this out for several meals. Our baby loves eating it too. This one's a winner.

Super quick, easy, & delicious. You can easily modify too, if you want to add different vegetables or add some herbs or whatever.

Seasoned Swai Fish Fillet

I omitted the wine because we don't usually like meals cooked with it & I was planning to let my baby eat some. I also reduced the black pepper a bit because I'm not a big fan. We cooked it in our NuWave oven, but that wouldn't alter the flavor any, just the cooking time. I've always hated fish, but have been trying to find some that I like lately & this one was the best so far & I didn't have to drown it in soy sauce to make it taste good. It didn't taste fishy at all. I barely even knew I was eating fish. We loved it so much, we had to make more while we were eating it & then made more to have as leftovers for lunch tomorrow. Our 13 month old gobbled it up too. We will definitely be making this again. I would have given this 5 stars, but I know I wouldn't have given it 5 stars if I had made it with the white wine.

Tasty Lentil Tacos

Ok.... coming from a picky eater who HATES beans & only eats meat & cheese on her boring tacos... these tacos were awesome!!! I used homemade seasoning & had to make up some salsa with what we had around (tomatoes, onion, garlic, dried cilantro, splash of lemon juice). I put organic plain whole milk yogurt, the lentil mix, cheddar cheese, avocado, & lettuce on mine. My husband added olives for his. I think these will be our regular tacos now & they're cheaper & healthier than ground beef! WINNER!!! I'm not a vegan expert, but we are working our way toward becoming weekday vegans & I think this recipe could be made vegan by substituting the chicken broth with vegetable broth.

Easy Garlic Broiled Chicken

I forgot to flip the chicken & re-baste it because I got side-tracked, so the garlic burned on top, but it still tasted very good and moist. We used boneless, skinless chicken thighs.

Di's Delicious Deluxe Deviled Eggs

We didn't have any celery, but aren't big fans of it anyway, so we left that out. That may be why these tasted just a little heavy on the mayo at first. We added a few more drops of hot sauce & a little splash of vinegar & these are really good.

Tangy Slow Cooker Pork Roast

We really loved this. I only changed a few things, which shouldn't have altered the flavor much. I didn't have an onion, so I used dried diced onion. Instead of sugar, I used Truvia Baking Blend (which is half sugar & half Truvia - used 1/2 the amount as recommended on the bag) just to make it a little healther. I put some oil in a pan & seared both sides of my pork (no idea what cut of pork I used, but it turned out way more awesome than I thought it would). I pulled that out of the pan, then put all of the ingredients in, mixed it & let it warm, then added the pork back in. I had some baby carrots & potatoes to use up, so I put those in as well (diced the potatoes). I didn't have time to slow cook it, so I just put a lid on & simmered for about an hour. We will definitely be making this again. My only complaint is that I didn't have enough sauce. I will probably double next time, so I have more to use as a gravy for the veggies.

Baked Potato Soup

Only made a few minor changes/substitutions because we didn't have all of the ingredients. First we cooked the onion & garlic in a little olive oil. We used a little less onion because I'm not an onion fan. I didn't cook it in bacon grease because all we had was Real Bacon (the kind that comes pre-cooked in a bag) & it doesn't make oil when we fry it. We had red potatoes, so we used 4 of them. We didn't have any half & half, so I used powdered milk mixed with water (less fatty). The soup came out great (not too runny). It is very forgiving, so you can alter the ingredients a bit & it still comes out very delicious. I almost always have to add extra salt or garlic powder or onion powder & I didn't with this recipe. It came out perfect.

Hearty Chicken Tortilla Soup

This is really delicious. We used frozen corn instead of the canned. You have to keep an eye on the tortilla strips. There's a fine line between perfectly done & burned, that you don't want to cross. I used a pizza cutter to cut them. The recipe was super easy and fast to make. It has a really great flavor.

Delicious Ham and Potato Soup

This is really good. I used 1/2 TBSP of celery seed instead of celery. I also added a mix bag of cauliflower & broccoli (cooked it most of the way in the microwave & then added it close to when the potatoes were done). I think I will add more ham next time. We will definitely be eating this again. EDIT: I cooked this again and used white pepper this time. I didn't realize white pepper was so flavorful. I really liked it, but think I would cut it down to 3/4 tsp next time. We did add some broccoli this time, but didn't need any onion powder or garlic powder, like we usually throw in to creamy soups. This is really good.

Chocolate Chip Pancakes

My husband told me today that his grandma used to make him chocolate chip pancakes with honey butter on them...so I did a search for chocolate chip pancakes & came across these. He really likes them. And I tried them both with and without chocolate chips. Without chocolate chips, I tried with regular syrup. These are great as a standalone pancake and as written with the choc chips & honey/butter/cinnamon mixture. We really enjoyed them. Thanks!

Pesto Chicken Florentine

I added some salt & used a whole 6oz bag of spinach. I also used 3/4 of a jar of alfredo sauce instead of mixing it up from a package. This was really good. I don't like spinach & am trying to find more ways to get some vegetables in my body. I couldn't really taste the spinach, which was awesome. Thanks!

Campbell's® Slow Cooker Savory Pot Roast

We added a cup of beef broth & used a recipe I found, to make the onion soup mix. This was really good & we didn't have to thicken up the sauce to make gravy. We will definitely be making this again.

Honey Wheat Muffins

I fully expected these "healthy" muffins to taste awful & was pleasantly surprised when they didn't. I ate mine buttered, with honey on them & they were pretty good. Not as good as the muffins I usually make, but those are incredibly unhealthy.

Kale Krisps

This recipe got me to try kale, so that was good. I wasn't sure how big a "bunch" of kale is, so we kind of estimated on that & I think we used a little too much cheese & it was really greasy. On one cookie sheet, I made 1/3 with cheddar cheese, 1/3 with cheddar cheese & sea salt, and 1/3 with garlic powder & Parmesan cheese. My husband & I both liked the Parmesan cheese section the best (although it stuck to the pan the most).

Perfect Sesame Chicken

I don't think I've ever eaten sesame chicken before, but I really loved this! I didn't have any chili paste, so I used chili powder instead. I also didn't fry the chicken in a quart of olive oil. Instead, I put only a little olive oil (maybe a few TBSP) in an electric skillet and cooked the chicken that way. The chicken came out very tender & the sauce was delicious. We put ours on jasmine rice & mixed some broccoli into it. We will definitely be making this again!

Penne with Garlicky Broccolini

We didn't have broccolini, so we used broccoli, but this was really good. We often make pasta with butter, salt, & parmesan cheese. This was a nice way to change it up a little bit.
