Mexican Blackened Corn

Excellent recipe. I used canned corn and it still turned out really good! I can't wait till summer so I can try it with fresh Utah corn!

Chocolate Sandwich Cookies II

These are really good! So easy to make. They talk a lot like Oreos only BETTER. Make sure not to overbake them though. They go from being a soft oreo to a crunch mess of crumbs on your shirt.

Slow Cooker Ham and Beans

Really good! I loved the brown sugar with the beans - just a little sweet but not too much. This is the best ham and beans recipe I've tried. Very easy too - not a lot of chopping, just throw it in the pot before you go to work! Thanks for the great recipe!

Apple Walnut Salad

Great recipe for apples. I used pecans instead of walnuts, but I'm sure the salad would have been good with either. I think its important to soften the cream cheese sufficiently to prevent getting cream cheese chunks. The brown sugar gave it a delicious sweet flavor. I bet you could put some grapes in it for variety. In fact - the dressing could probably be used on a number of different fruits. Thanks for the recipe!

Dill Pickle Meatloaf

Very good! I kept the recipe pretty much intact - I added some spinach and toasted the walnuts which gave it the most delicious nutty flavor! YUM! I'm looking forward to eating this all week for lunch!

Wow this was good. I didn't strain it either. I did add some strawberry vodka and was EXTREMELY pleased with the outcome. Even my husband who doesn't drink "girly" drinks hand some!

Double Dare Peaches

WOOOOHOO! I suspected this might be too hot for many of the people I was serving it for, but it really wasn't. Besides the ice cream that helps cool it off, the heat is just a little end note and doesn't overwhelm the peaches. I recommend making sure you don't dice the peppers too small. Maybe just chop them in quarters. The butter gets a little frothy and it can be hard to find the peppers to take them out. You wouldn't want someone to come across one on accident! YIKES! Everyone loved it. GREAT unique recipe. I'll definitely do this one again!

Pistachio Fluff Fruit Salad

I needed something easy for a camping family reuinion. This was definately easy - open the cans - put them in - done! I used while chocolate pudding vs. pistachio to satisfy my sweet husband and it still turned out good. Nothing spectacular but good.

Caribbean Crabmeat Salad

Beautiful and delicious. I used mini bowties and probably would have gone with a more "sturdy" pasta like penne or rotini as suggested. Loved the zing of the jalapeno. It got better the longer it sat. I'm looking forward to having leftovers all week for lunch!

Lots of chopping but worth it. We have peaches in season so I used some firm peaches instead of the pears and it was great. The cilantro was a really nice kick. This is such a light summery salad - I'll make it again.

If I die and go to heaven... this is what they will serve. I put some chopped jalapenos in it because I couldn't resist. It was devine....not pretty - it tends to separate but when I almost started a fight over the leftovers I knew it was a hit.

Gramma Bertha's Banana Cake

So - I made a measuring mistake and added 6 eggs (used egg beaters) instead of 4 but it still came out great! I frosted it with a whipped cream topping and sprinkled some walnuts on top. It was beautiful and delicious. Not too much like banana bread - had a nice cake texture. I'm going to try it again with splenda next time to see if I can make it even more low cal. Thanks for the recipe!

Depression Era Corn Chowder

Very good soup. I added a bunch of garlic and some chicken. Based on the comments from others that it was watery, I made a roux and tried to thicken it up a bit. It helped a little, but if you want it really creamy I'd use half and half. (I used skim to help with calories.) Delicious, simple soup.

Tangy Slow Cooker Pork Roast

The sauce was delicious - one tip I have though is to make sure your roast is completely covered with the sauce. I used a crockpot that was too big and the exposed meat ended up drying out. I will make this again, but make sure to either double the sauce or use a smaller crock pot. Overall this was a good easy recipe.
