Reviewed: Mar. 26, 2014
I just made this recipe for dinner and it is delish! It was a very easy week night recipe too. I am vegan but my omnivorous hubby is going to love this beside some BBQ, I just KNOW it! Thanks for a lovely VEGAN recipe that rocks!!

Tomato-Cream Sauce for Pasta

Reviewed: Nov. 6, 2013
Thanks for an inspiring vegetarian dish! I would improve it by removing the dairy and in its place use earth balance spread and coconut cream which is delicious and much healthier. To get the cream, keep your can of coconut milk in fridge, 24 hrs minimum, the cream will rise to the top and you can scoop it off!

Portobello Mushroom Burgers

Reviewed: Sep. 17, 2013
I gave this recipe 5 stars because it is really delicious, has very few ingredients, is so simple to make and fast from start to finish and finally because it is HEALTHY & VEGAN (leave out the cheese or replace with vegan cheese)!!! I have in fact gone vegan and Im experimenting with ways to change up favorite recipes without buying the tofu and soy substitutes like "veggie burgers". This is a super yummy burger alternative. It really did taste like a burger except I didn't feel like a big fat hog after dinner! A couple of things I did to make it my own: Instead of mixing the marinade, I saved the bowl and utensils and sprinkled both sides with the oil, then red wine vinegar, rosemary, oregano, salt & pepper. Let it sit while the grill heated then I GRILLED GILL SIDE DOWN FIRST. This trick lets the juice out of the shroom so when you flip it to finish cooking it, you won't have a soggy shroom. I bought onion buns at the grocery deli which we all think really takes this burger to new heights - oh man yummy. Also I added a little BBQ sauce instead of ketchup, fresh sweet onions, fresh spinach leaves

Rosemary Roasted Turkey

Reviewed: Dec. 27, 2012
I dont know why I never thought of this myself - it's easy and fabulous. I grow my own herbs and what a perfect way to showcase them. I dont think you could add too mamy fresh herbs to this. And mixing them in with the EVO is OMG! I've been roasting birds for a long time but The King proclaimed, "This is the best roast chicken I've ever had - EVER!!"

Spicy Sausage Broccoli Rabe Parmesan

Reviewed: Sep. 20, 2012
Thanks for a simple recipe! I needed to use some ingredients we already had so I sub'd the italian sausage with beef sausage; I used fresh grape tomatos instead of canned; I steamed fresh broccoli in place of the rabe; and I used farfalle instead of rotini. The King loved it and so did I.

Crunchy Eggplant Parmesan

Reviewed: Aug. 30, 2012
Even though it is healthier (not fried) it is still crispy & delicious! Leave plenty of time for prep - quite a bit of work for a week night. I sub'd fresh mozzarella for the shredded Italian cheese. This is a beautiful, brightly colored dish that presents well and The (Meat) King loved it!

Brie en Croute

Reviewed: Oct. 30, 2011
Thank you for this elegant, easy & mouth-watering recipe! I used to treat myself to this at a jazz club in college and never dreamed how easy it would be to make for myself. When I found this recipe and made it, we were so impressed - it is just as delicious and beautiful as the club's! I love to serve this for any gathering with fresh granny smith apples, crusty french bread and Carr's Table Water Crackers - mmmmmmmm. Cant go wrong with CHEESE & BREAD!

Stuffed Jalapenos III

Reviewed: Oct. 29, 2011
Absolutely my hubby's favorite meal - yes, we eat them for dinner sometimes. Why not? Also he begs me to make them for football Saturdays and any time we have company. He's even made them for himself in my absence. Easy & Yummy! PS - produces LOTS of grease - use a pan with SIDES, line it with foil or a silpat for easier cleanup.

P.J.'s Fresh Corn Salad

Reviewed: Oct. 29, 2011
This was good but I chose to make my own Italian dressing rather than buy a bottle with all the extra gunk added. Its an easy recipe to change around according to a)what you have and, b)what you like.

Movie Star Popcorn

Reviewed: Oct. 29, 2011
Im so glad to see this recipe. Younger cooks may not even be aware that one could make popcorn any other way than putting a bag in a microwave. And it is SO much better this way - definitely more FUN - and without the nasty chemical tastes (and smells) that I notice when Im forced to eat nuked popcorn.

Yummy & Easy...oh, and very healthy too considering the protein of the garbanzos, the unique vitamins in red peppers and the lowfat dose of dairy in the feta - CHEERS!

Spicy Lime Grilled Shrimp

Reviewed: Oct. 29, 2011
Sounds great but once grilled, we didn't taste the lovely marinade at all. From my experience, it's more flavorful to grill them plain, then add the sauce AFTER grilling, no matter what the marinade is made of.

Who knew ahi tuna was so easy? Love it! Instead of breadcrumbs, I used black sesame seeds and it was more Asian-inspired and delicious. Thanks for sharing this simple and wonderful recipe.
