Cranberry Oatmeal Cookies

These cookies are soooo delicious. Even my husband who is not a big fan of cranberries has said that they are pretty good. I used milk chocolate chips but otherwise followed the recipe exactly. Do not forget to add the orange zest, it really makes this cookie!

Bobbie's Oatmeal Cookies

I made the cookies for a road trip with my girl friends yesterday and they were a huge hit! I just had to make 2 substitutions based on my pantry: walnuts instead of pecans and Splenda sugar baking blend instead of white sugar.

Pizza Casserole

Overall, we liked the dish. The edges seemed a bit bland but it might just be that it needs more pizza sauce than the recipe calls for. I used an Italian 6-cheese blend (mozzarella, parmesan, asiago, romano, fontina, provolone) instead of just mozzarella and also used more because we like cheese a lot. I mixed a big helping of cheese in with the pasta and put the rest on top of the dish. Also quartered some of the pepperoni and browned it together with the ground beef and 3 gloves of garlic. I used Italian seasoning. Will definitely make it again, only next time use more sauce.

Pasta with Scallops, Zucchini, and Tomatoes

My wife thought this dish was OK, nothing special, but I liked it quite a bit. I would make this again for sure. We used dried basil instead of fresh, only about 1/8 cup (for 4 servings) and that was plenty. We also added some mushrooms, white wine and butter near the end. Be aware - this dish starts out with very little liquid, but once you add the tomatoes, it produces an abundance of liquid. I would suggest 'draining' the tomatoes or otherwise trying to get some of the liquid out before you add them. We let it simmer to reduce for about 5 extra minutes.

German Apple Cake I

My husband thinks that it has more the consistency of bread pudding than cake. It might be because I used a lot of apples. I served it with caramel sauce and people liked it.

Ginger Glazed Mahi Mahi

The glaze is far too overpowering for any fish. It would probably work well for chicken, just not fish. Good flavor in general, but definitely the wrong protein with which to pair it.

Angel Hair Pasta with Shrimp and Basil

Something just doesn't seem right with the recipe. I followed some of the recommended changes, added italian seasoning, etc. and it still came out bland. I will stick to the "Best Marinara Sauce yet" recipe and just add shrimp to it.

Mainely Fish

We tried this based on the good reviews but were very disappointed. There are too many competing flavors in this dish and something in dish produces a strange flavor. The fish itself was fine, but there was an underlying flavor that did not fit at all. We will not make this recipe again nor would we recommend it.
