Whit's Chicken Enchiladas

Simple Scones

So fantastic. I used my stand up mixer to incorporate the butter and it worked beautifully. Instead of raisins, I used fresh organic raspberries. I worked them in trying my best not to break them. When they came out of the oven, my husband who is a health nut, gobbled one right down. We both agreed they were fabulous. This will be my go-to scone recipe for sure. You have to try it!

Party Pinwheels

These are such a hit everytime I make them. I am always asked for the recipe. They're simple to do and made in advance, so when my guests come I can just slice them and put them out. Another benefit is that they don't take up a lot of room in the frig.

Seven Layer Taco Dip

Chinese Chicken Salad III

This is an excellent salad. I cut the peanut butter to 1 T, add some cut up napa cabbage and sliced almonds for more crunch. I have made this several times.

Sugar Snap Peas

This was surprisingly exceptional. I say that because only a few simple ingredients made the flavors of this dish fabulous. I used fresh shallots and thyme, which I would highly recommend, and had it in the oven at about 390 degrees. I used a brush and dabbed brushed each snap pea with a little olive oil. I frequently roast vegetables at 450 and didn't want those burt edges on the snap peas. They cooked up nicely with a crunch. This will definitely be a "go to" side dish. Thank you for this keeper!

Peanut Butter Cup Cookies

Outstanding. So nice to have a peanut butter cookies similar to the peanut blossoms, but something a little different. So easy to make and very delicious.

Ginger Glazed Mahi Mahi

Thank you so much for sharing this fantastic dish. I got my cast iron skillet fired up and seared it on both sides. It got those great grill marks and added the extra sauce when I dished it out. The flavors are great. I'll definitely be printing this out and making it over and over.

Grandmother's Buttermilk Cornbread

This recipe is perfect as written and in my opinion, not too sweet. I even served it with a side of honey butter. I read another reviewer's comments and made them into muffins...375 for 20 minutes and they turned out perfectly. I couldn't have asked for anything better. Thank you so much for posting this amazing recipe.

Easy Polenta with Tomato Sauce

I had never made polenta before and I don't believe mine turned out the way it should have. It seems in the photo, Jacquita cut hers into slices. Mine was runny like ricotta. I gave it four stars because it tasted ok. I added parmesan and fresh basil on top.

Curried Coconut Chicken

I was looking for a traditional yellow chicken curry recipe, but after reviewing many different ones online, some seemed to lack flavor, which I was avoiding. I thought I’d give this one a try. I have to say the house smelled amazing and my husband even commented on how good the aroma was. I felt 3 tablespoons of sugar was a little too much. I added a diced potato in with the chicken. In addition, I added another tablespoon of curry powder and about one teaspoon of red pepper flakes. The dish was very good, however it’s still lacking something. Next time I may chop up an entire small onion, perhaps that will give more flavor. This was good and I would definitely make again.

Quinoa and Black Beans

I was excited to try this as I love anything with quinoa and/or black beans. We felt it was ok at best. With all the ingredients, I felt it would have had more flavor. It was somewhat bland and very dry. I'd maybe make it again due to the nutrition value, but didn't love it.

Popovers

I thought they were a bit heavy and doughy and so did my husband. There's a restaurant we enjoy that has the best popovers and I was hoping for something closer to them. We like the more airy, lighter ones. Plus after I buttered and floured the cups, the popovers almost had a paper-like outer coating around them that was tough to eat. I'm going to try out some other recipes to see if I find what I'm looking for. Don't think I'd make these again, but it was a good try.

Carrot and Ginger Soup

I was so excited to try this recipe after having it at a local cafe, not to mention seeing the recipe's high rating. The soup had no flavor whatsoever and was very bland. I even added some curry powder hoping that would help. The consistency and color were great, but it tasted like blah onion water. Wasn't a hit with me.
