Uptown Red Beans and Rice

Slow Cooker Thai Pork with Peppers

This was great! The only thing I did different was cube the pork into one inch pieces before I put in slow cooker, no need to shred! Served with rice noodles and ginger carrots (from this website). Next time, I may add a little bit more red pepper spice, but it was still great!

Sausage French Bread Pizza

I put a little olive oil and cooked the bread for about 7 min first to avoid sogginess. I also added onion to mine, and next time I will only use half the sausage, as it was way too much. But still, these are excellent!

Easy Lasagna II

This was the easiest lasagna ever! I modified by only using 12 oz of cottage cheese, and I used 2 24 oz jars of sauce. I also only used about 1/8 cup of water--just a little on the sides. It was great!

Chicken Stew With Coconut Milk

Next time I would use half the amount of lentils and add 1/3 cup of raisins. It was still good though, but the potatoes and lentils provided a trxture that wasnt to my taste.

Roast Chicken with Rosemary

Added one chopped garlic glove to the stuffing mix, rubbed in dried rosemary to the skin, then covered with about 1/2 cup of chicken broth. It was great!

Cheesy Pork Chops with Spicy Apples

I think this would've been better as a skillet meal, cutting the pork and adding it to the vinegar sauce. I thought the pork was bland, but the apples were great. Next time I'll try it the skillet way, adding shredded cheddar at the the end and serving over rice.

Sweet Russian Cabbage Soup

Made this way based on reviews: 1lb lean gr beef, 5 cubes beef buillon, 1/4 cup white vinegar, 1/2 cup brown sugar (instead of white) and I used 1 qt plus 1 pt water, and only 1/2 tsp salt. Everything else was as written. That said, this was a fantastic soup!

Lentil Chili

Next time, I wouldn't use as much chicken broth, as it was too much liquid. I used half tbs of chili powder and half tbs of paprika. I also added 1 cup of rice, to absorb the liquid. The taste was still very good, and I would make again with adjustments.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

I modified a little, but only because I wasn't paying attn when grocery shopping. I used 14.5 oz of crushed toms, and 14.5 oz tom sauce instead of 28 oz crushed toms. I added half tbs of oregano and substituted veggie broth for chicken tom make it completely vegetarian. I also only used 4 oz of crumbled goat cheese. That said, all else was made as written. WARNING: this makes a lot of food, but it was really good! I would make it for a pot-luck.

Coconut Tofu Keema

I only used 2 tbs of olive oil, one 14 oz can of tomato sauce, one can of coconut milk and omitted the red pepper paste. I also used 2 tbs of curry, but that's just to my taste. This was excellent and I will make again!

Honey Curried Roasted Chicken and Vegetables

I used a 4 lb chicken which took a little over three hours to cook. I placed the veggies minus the shrooms with the chicken the whole time (no preboiling) and they cooked great. I added the mushrooms at the last 20 minutes with the sauce, which I doubled. The sauce seemed a little too thick, so next time I'm going to use honey mustard in replace of the honey (as honey is kinda pricey anyway) and maybe just a 1/3 cup of dijon for flavor.
