Roast Chicken with Rosemary

Reviewed: Jan. 5, 2011
Added one chopped garlic glove to the stuffing mix, rubbed in dried rosemary to the skin, then covered with about 1/2 cup of chicken broth. It was great!

Curry Pumpkin Soup

Reviewed: Jan. 5, 2011
Omitted pumpkin seeds but added one small diced onion to beginning. Made as is, but added one extra tbs each of curry and sugar. Awesome soup!

Marinated Baked Pork Chops

Reviewed: Nov. 30, 2010
Used 4 boneless pork chops, doubled the marinade. Used all marinade at once (covered the chops). Baked covered @ 350 for 25 mins, uncovered and broiled for the last 5. They were great!

Brown Sugar Smokies

Reviewed: Nov. 25, 2010
Just a note to line the pan with foil--pretty much lost a pan. But, they were still very good.

Coquito

Reviewed: Nov. 25, 2010
I hate eggnog, but love love this stuff. This is my 2nd year making it for Thanksgiving. I use 3/4 a cup of rum (like it a little stronger). I also don't have a double-broiler, so I just heat the eggs and milk on the stovetop stirring frequently until it coats the wooden spoon. Thank you so much for giving me a Thanksgiving staple!

Butternut Squash Soup

Reviewed: Nov. 16, 2010
I like texture in my soup, so I blended the squash and the cream cheese (only 8 oz) then added it to the onion mixture, then added the broth and spices. I really enjoyed this soup, but still tasted cheese more than squash, I may use even less cream cheese next time.

Easy Meatloaf

Reviewed: Nov. 8, 2010
So easy! I added about a teaspoon of worcestire to the loaf, and it was so good!

Barbeque Beef Casserole

Reviewed: Nov. 8, 2010
Next time I'll make it in a deeper dish and use only two boxes of cornbread, as I thought it was just too much bread. But, will try again this way.

Golden State Mushroom Soup

Reviewed: Oct. 30, 2010
I added a splash of red wine to the mushrooms and onion with the butter. This soup was soooo good and has now become a cold weather staple!

Classic Goulash

Reviewed: Oct. 18, 2010
I made as is, but added a small can of mushrooms, drained. It was good and reminded me of what my Mom made growing up, but as suggested I'm going to swap the soy for worchestire next time as it was lacking something small and this may be it.

Stuffed Acorn Squash Supreme

Reviewed: Oct. 17, 2010
Made as is, it was tasty, but it lacked something. Will make again maybe adding a little chicken broth.

Easy Weeknight Tuna Pot Pie

Reviewed: Sep. 30, 2010
The inside was great, but i couldn't get the crescent top to bake properly. My pot pie overlapped quite a bit, so maybe I would suggest trying to not overlap because mine came out kind of gooey. Will try again, but with caution.

Eggplant Parmesan II

Reviewed: Sep. 27, 2010
This was way too saucy, next time I'd cut back. I also had to use more bread crumbs and eggs than were suggested, but overall it was a decent meal.

Turkey Broccoli Hollandaise

Reviewed: Sep. 20, 2010
Instead of layering, I mixed the turkey, broccoli and stuffing in a bowl, then put in the pan. Topped with the hollandaise and french onions. It was great! Will keep this in mind for Thanksgiving leftovers!

Acorn Squash Soup

Reviewed: Sep. 18, 2010
I made as is, except used 1/2 tsp curry powder. Next time, I will up it to one, but I love curry! We ate this up, the bacon crumbles compliment the soup so well. I suggest crumbling a little extra bacon. Also, thanks to SStephan for the cooking help on acorn squash, I used two small ones and it made the three cups.

Turkey and Quinoa Meatloaf

Reviewed: Sep. 6, 2010
This was so good. I didn't want to waste all my tomato paste, so I added 1 tbs to the topping mixture. I also covered it with shredded cheddar in the last 10 mins. So yummy!

Oven Roasted Red Potatoes

Reviewed: Sep. 6, 2010
These were just great! I would suggest to spray the inside of the dish with Pam as some of the potatoes become stuck.

Slow Cooker Thai Pork with Peppers

Reviewed: Aug. 31, 2010
This was great! The only thing I did different was cube the pork into one inch pieces before I put in slow cooker, no need to shred! Served with rice noodles and ginger carrots (from this website). Next time, I may add a little bit more red pepper spice, but it was still great!
