Filet Mignon with Rich Balsamic Glaze

I had to work Valentine's Day so we had Valentine's day dinner today. I read some of the suggestions, and reduced the glaze ahead of time with a table spoon of brown sugar. I heated 1 tablespoon of butter, and about 2 tablespoons of Extra Virgin Olive oil, and sauted the steak as the recipe called for, then I added the reduced glaze and continued following the recipe. The steak was so tender, I don't know why I put out steak knives, when a basic table knife would have done the job. We had cut up baked red potatoes with olive oil, paprika, and lemon pepper (daughters favorite) and a tossed salad. We had a bottle of Paso Robles Cabernet Sauvignon with the meal. Probably not the best choice, but it was very good. My wife was teasing me a little.. She said this meal was above restaurant quality, except it didn't have the plate decorations.

Kalua Pig in a Slow Cooker

This recipe was advertised in on of the "I love slow cooker" recipes I received this week. After visiting Hawaii in April of 12 and having it at the Dole Plantation on Oahu, my wife was hooked on it. The biggest challenge in making this dish was finding the "Hawaiian Sea Salt". I did find it at a grocery store I absolutely hate shopping in. The recipe was easy to make it, and when my wife and daughter returned from their trip, they couldn't believe how great the house smelled. I read where other people at put the liquid in the freezer and was able to get some of the fat off, I did the same. After I shredded the pork,I put it back in the crock pot to keep it warm. I stirred in some of the left over drippings to keep the meat moist. All and all it was very good, and we will be having it again.

Pasta Fagioli

Made this last night for my wife and I for dinner. I rushed a little and didn't fully saute the onions and celery... got home late from work and was starved. The only things I will change the next time I make this (which will be soon) is to start the noodles in water and when they're almost done, add them to the soup, and cut down the crushed pepper to an 1/8 of a tsp. The crushed red pepper was on the verge of being too spicy. We had a Pinot Noir with this and some french bread. All in all it was a wonderful dinner on a cold autumn night.

Pasta Fagioli

Autumn Spice Ham Steak

This was the recipe of the day on 10/20/12... I was sitting at my in-laws place,ealy in the morning, trying to figure out what to make for dinner after we came back from the casino... And this recipe sounded easy, quick, and delicous. I read several of the reviews and also felt 2 apples was not enough. So, I added 2 more apples. The other change I had to make was to cook the ham seperate (not my kitchen, didn't have proper pan), keep it warm, and prepare the apples. I added a little more butter and sauted the 4 sliced apples. When they were almost done, I put the ham back in. I also made stuffing with this meal and steamed green beans. The only bottle of the wine in the house was a semi-sweet red Bully Hill.. Not the best match, but it was good enough. Every body raved how good the house smelled while I was making dinner, and how great the meal was. I have added this recipe to my recipe box, and will make it again.

Italian Sausage Soup

I have made this soup twice for my wife and me. Wife said she hated spinach...'not any more. I followed the receipe as writtent except the store didn t have bulk Italian Sausage, so I bought the links and pulled the skin off and chopped it up. She is already asking me to make it again.

Bourbon-Glazed Ham

I made this for Christmas dinner this year. I started marinating it after the Christmas Eve Service and started baking it at about 12 for a dinner at 3. The dish was excellent. I was worried about the bourbon over powering the flavor after reading a couple of reviews, and that was not the case. As my wife and I were finishing off the bottle of Pinot Noir, we discussed the possiblity of using a sprial cut ham next year, or the next time I make the dish. Recipe was extremely easy. The biggest challenge was finding a bag big enough. We ended up using a roasting bag. Thank you for the recipe.

Quick and Easy Vegetable Soup

I have been making this soup for the past few years for our youth sponsored "Souper Bowl" fund raiser. It is always a hit, with the youth eating a lot of the soup. I use a vegetable bullion instead of a meat broth to keep it truly vegetarian. At the house, I use the chicken broth and my daughter loves it.

Beef Barley Vegetable Soup

I seen this recipe the other day, and thought that it sounded too simple to be good. I made it yesterday for dinner. I have a finicky 17 year old daughter who can make preparing a meal a challenge, however, she loved this soup. She even had it for lunch today. I fixed a loaf of beer bread to go with it. Merlot goes great with it. I will definately being making this recipe again. Thanks for a great fall winter recipe.

Butternut Squash Casserole

I made this recipe for the first time for a Sunday School dinner. It was the first thing to disappear. My wife recieved all sorts of compliments, and then had to tell the ladies, that I made it. I've been asked for this "old family" recipe by several people...
