Cajun Roast Beef

Great Flavor! Substituted cider vinegar for malt, added 1 cup beef stock and injected roast with some of the marinade. Allowed to marinade overnight. Grilled in a loaf pan, covered with foil for 2 1/2 hours at @ 300 degrees. Probably should have pulled it off after 2. It was a little dry but when drizzled with the gravy I made from the drippings it was absolutely delicious!

Made as written but used fresh mushrooms. Good basic recipe but a bit bland. Will add Old Bay seasoning or maybe Tony Chacheres next time I make.

Trishie's Cedar Plank Cod

Tried this out last night on some Ling Cod I brought back from Alaska. I liked the hint of sweetness from the honey and rosemary, and added a 1/2 tsp Old Bay to spice it up a bit more. I ground all the seasonings up in a mortar and pestle and then sprinkled them on both sides of the fish steaks. Yum. Cedar planking is the way to grill fish. Good, quick and tasty recipe.

Beef Stroganoff III

Smoked Salmon Tortellini with Bechamel Sauce

I found this recipe to be exceptional with the ingredients I had on hand (which is how I found it; searched mushrooms, onions, bell peppers and smoked salmon). I didn't have cloves or milk so substituted 2 tsp dill and fat free half and half. The dash of nutmeg gave a suprising hint of sweetness in the final dish. I also don't have a plethora of saute pans, so sauted the onion, mushroom, asparagus and peppers in butter in one and simmered the cream, butter, dill, bay leaf and nutmeg in another. I whisked in the flour in the same pan after removing the bay leaf. I shreded the smoked salmon and added it to the sauted veggies about 5 minutes before I added the tortellini and sauce just to heat it through. A great bowl food recipe and great use of the last of my alaskan smoked salmon before my next trip there this summer. I'm eager to see how it freezes. It's in my recipe box.

Banana Sour Cream Bread

Made this last night exactly as described, sans the walnuts, including dusting the loaf pans. Doesn't everyone keep cinnamon sugar in the spice rack? It made a nice sticky glase on the bread. The smell of cinnamon filled the house and drove me crazy! I made three 5"x9" loaves which took about 1 hr 20 minutes to bake but they came out great. Took one into work this morning and it was gone by 9:00 am. People were asking for the recipe. We have tons of bananas in the yard this time of year and this is a great way to use them! Thanks for the recipe!

Roasted Pork Loin

Excellent Pork Loin recipe! I nuked the olive oil, crushed garlic and fresh minced rosemary for about a minute. The garlic disolved into the oil, which I then separated from the rosemary and injected into the pork. The remaining rosemary/oil was rubbed on the roast and stuffed between the two loins that I tied together with roasting twine. I also dusted the roast with onion powder, garlic powder, salt and fresh ground black pepper. Very moist and flavorful!

Ginger Glazed Mahi Mahi

Over the top Fantastic! Caught 4 Mahi Mahi this afternoon in the Caribbean and captain filleted them at the dock. Can't get any fresher. Never made a glaze before. Used the 1/2 tsp ground ginger and grilled in foil tray for 8 minutes as others have done. Served with couscous with a little glaze folded in. Absolutely Awesome.
