Absolutely Ultimate Potato Soup

Zucchini Corn Medley

This was tasty! I did add some cumin and omitted the hominy (I didn't have any). It was simple to make and is definitely a good blend of flavors.

Big Germans

Well, what do you know, it's a German pancake! Lol. My family and I have been making this for years - we just called it a French pancake. Anyway, we always mix it up in a blender or food processor. We melt the butter in a cast iron skillet in the oven, then pour in the batter. We save the salt for last and sprinkle it on top of the batter before putting it in th e oven. It always bakes up with a nice tall, golden crust around the edge. We then sprinkle the top with a healthy (or perhaps unhealthy) dose of powdered sugar and a good sprinkle of nutmeg. Serve it up with syrup! My father is the only person I have met so far who didn't like it. Go figure.

These are awesome! I like to use Hershey's dark cocoa instead of regular baking cocoa, and I leave out the chocolate chips.

Morning Glory Muffins I

These are excellent! Very moist and flavorful. I added some flax seed and used more whole wheat flour. Both of my children really enjoyed them and I think it is a pretty decent breakfast, also a good way to sneak in extra veggies.

Fluffy Pancakes

Great pancakes as advertised. Today I decided to turn them into Gingerbread pancakes which worked very well (in my opinion). I substituted 2 Tbsp molasses for the sugar and added 1 1/2 tsp ginger, 1 tsp cinnamon, and 1/2 tsp cloves. My kids cleared their plates happily.

Burrito Pie

This was great! I took it to a pot luck and everyone liked it. It was really easy to make and it is easy to customize if you so choose. The only change I made was to leave out the black olives as not everyone likes them in my family. I had them available to put on top if someone wanted them. I may go with a spicier taco sauce next time as I like extra kick (I used medium).

Sweet, Sticky and Spicy Chicken

This was very good. My husband really liked it, which is a big deal. It was easy to make. I did not have regular hot sauce, so I used sriracha sauce. If you do this, you might want to lessen the amount unless you like it very hot. I agree it didn't thicken well. I did not want to take the time to dredge my chicken in flour, so I simply added a little cornstarch right before I served it. It thickened it right up, and seemed more true to the Asian roots of the recipe.

Broccoli Soup

After reading some great & some not so great reviews, I decided to give this soup a try even though my first impression of the ingredients did not appeal to me. Should have stuck with my first impression because I found it very bland, and watery. I used fresh broccoli which may have affected it some and left out the nutmeg. After doctoring it up with some cream, cheddar cheese, and butter and also thickening it with some flour, it was much better. This one is not a keeper for me.
