Green Chile Beef Tacos

I used this recipe as a starting point. I like to create my own varaitations. I had a plan to slow cook a beef chuck roast with some green enchilada sauce. This recipe gave me the idea to add the broth which I definately recommend for flavor as well as moisture. I buy low sodium because the sauce and taco mix already have enough. From another recipe I used half a chopped onion to line the bottom, placed the roast on top and added the enchilada sauce and a can of green chili's, broth and topped with cilantro. This made some wonderful meat to be used in burritos taco, enchilada's or just over rice and beans. It was not spicy so add some heat if you like or simply eat with hot sauce as we did.

Skillet Chicken and Vegetables

This recipe is just what is says, Flavorful and nothing spectacular but definitely not dull, the man says he doesnt think it will make a good leftover because of all the veggies, but he went back for seconds! I think its great either way. Very delicious and quick to prepare. I always add red pepper flakes to my dishes so I seasoned the chicken with that and some salt and parsley. I also shy away from mayo so I used a 1/2 cup of Italian dressing, 2 tbs of mayo and the 3 tbs of parm. It tasted better then I expected, the cheese balance out vinegar taste of the dressing. These days I add chopped spinach to almost every dish. I forgot to buy the red pepper but it was still great. I think you can alter this recipe using many different meats and veggies. Yumm!!!

Fusion Hummus

This is a great starter and can probably be changed for your preference. Be careful with the balsamic vinegar, mine had too much, but I added pepper to be more of what I was looking for. I also had no rosemary so next time I will have to get some, I am sure it makes all the difference.

Chinese Shrimp and Tofu Soup

I love ginger and this was gingertastic! I agree you may need to add more then the recipe calls for. And yes add the tofu with the shrimp for more flavor. I also added cumin and coriander powders to the stir fry and red pepper flakes instead of salt. I am a broth lover and the amount of cornstarch was just perfect for me! My boyfriend doesn't eat seafood so I will try it with chicken maybe next time. YUM YUM.

Spanish Rice II

I was looking for a way to make Spanish style brown rice and this was a winner!! Yes I used chicken broth as others suggested, because I always do, much better flavor. I had on hand a red bell and so that was added in. Another suggestion said use cumin and that was fantastic, 1 tsp each of salt cumin and chili powder. Of course if your using brown rice, the simmer time becomes about 50 min, and make sure to brown it in the pan for about ten stirring constantly so all the rice gets cooked evenly. Great recipe.

Sausage and Sun-Dried Tomato Quiche

This is an easy and delicious quiche recipe that can be altered to your own liking.I gave it 4 stars because i wasn't amazed. I think the sun dried tomatoes could be reduced. I added my signature ingredients of spinach and cayenne pepper. It was great and cooked perfectly after 50 minutes, I did tent with foil for half an hour. I also chose colby jack cheese instead of mozzarella and used 2 boneless chicken thighs in place of the sausage at the request of my boyfriend. Tasted good, but would love to try again with the sausage. Will continue to use this recipe as a base and switch up the meats and cheeses! Would be nice for brunch or breakfast with bacon.

Grilled Pork with Hot Mustard

This was a tasty and simple meal- I can imagine it as a great appetizer for a party or sports event also, although I made if for dinner with an artichoke and some garlic bread. I did make a few minor changes using what I had at home since I was looking for a new marinade for pork loin that I already had in the freezer. I only cooked half of the loin, it probably weighed about a pound. In the marinade I added sesame oil that i had and no sesame seeds. My boyfriend isn't a big fan of horseradish and so he just mixed up yellow mustard with some Spike (seasoning) and hot sauce (Tapatio). This was an amazing dipping sauce I will use again. Also I seared the loin in a stainless steal pan on the stove top about 2.5 minutes a side and then baked it in the oven in a glass Pyrex at 350 for about 30 mins (160 degrees). It was delicious and juicy. Try it tonight, sure to impress!

Italian Sausage Soup

This soup is wonderful and easy. I had some Italian Sausage so I went browsing for a new recipe. I am a obsessive soup fan so I thought this would be the perfect recipe for an October night. I didn't have any of the other ingredients but after a fast stop at the market I had everything for under 10. We read over the other reviews and agreed that it could be changed for your own personal preference, but we thought for the 1st time making it we would just follow the recipe as is.It was so good,full of fresh vegetables. I wish I was still eating it. The flavor is perfect and I did add some red pepper flakes because I like a spicy soup but Hot Italian Sausage doesn't sit well in my stomach. I don't think I will change anything next time except maybe use turkey Italian Sausage to cut down on the fat. This soup is so yummy with fresh extra sourdough and a good red Italian wine. We had Chianti. I think I will be adding it to my list of favorites and many of them are soups! Thank you.
